Make your own Lemon Milkshake at home with Homemade Lemon Curd…
I love Summer and I love lemons. AND this recipe is ALL that! All you need is a heavy duty blender and you´re good to go!
I used the lemon curd I made for my Lemon Meringue Popcorn and Lemon Pie Sundae recipes, and it worked wonders.
So last week my daughter, Teagan, graduated from highschool and we were super super busy. On Wednesday, we spent a day in an amazing spa based in the south of the island to reward her for a job well done. The poor girl was locked up in her room for weeks studying and seriously needed some down time! On Friday night we went to the actual graduation ceremony where she sang Sam Smith´s “Lay Me Down” – a verrrry proud moment for me as a Mother, and you know the tears were rolling…
I simply can´t believe she has grown up so quickly!
Ingredients
- juice of 4 medium sized lemons
- zest of 3 lemons
- 1 cup white sugar
- 3 eggs
- ½ cup melted butter
- 3-4 tablespoons lemon curd
- 2 scoops vanilla ice cream
- 0.5 cup whipped cream
- 0.5 tsp fine lemon zest
- 1 cup milk (I use fat free)
- sprinkles
- more whipped cream
Instructions
- Juice and zest the lemons.
- Whisk the sugar and eggs together well, then add the lemon juice, lemon zest & melted butter.
- Heat on 100% power for 3-5 minutes, stirring every 1 minute (mine took 4 minutes in total).
- Push through a sift to make sure there aren´t any lumps.
- Cover with cling film and let cool down at room temperature.
- When cool store in glass a jar for up to 2 weeks in the fridge.
- Mix all the ingredients (except for the sprinkles) together in a heavy duty blender.
- Swirl some cream on the top and sprinkle with your favorite sprinkles.
- ENJOY!

In June I will be flying with her to Barcelona where she will be writing a pre-acceptance exam at a University in Barcelona to study Translation & Interpretation. She was 10 when we moved to Spain which has given her an amazing linguistic capability, And to be fluent in 3 languages, i.e. Spanish, English and Afrikaans. She also has an A2 level in French (one of the subjects she took at school). All because of living in Europe. Definitely one of the huuuuge advantages of living here! Guys I am going to be a Mom of an University student.!! When did I get so olddd!?
To get back to this lemon milkshake – sorry I got sidetracked there for a moment or two – seriously guys this milkshake was super easy to make. and I´ll definitely be making it again soon! 🙂
