Lemon Meringue Gourmet Popcorn Recipe – if you like Lemon Meringue Pie and Popcorn, you´re going to LOVE this recipe… Seriously, Lemon Meringue Pie has never been so easy!
So recently I shared my Lemon Curd Recipe I make in the Mircrowave on Facebook live video. Yes live! To be honest it´s quite scary to do the live version because you can´t edit out any parts therefore any mistake you make is there for everyone to see. BUT I tell myself that we are all human, nobody is perfect (I tell myself this about 100 times before starting the video each time) and everybody wants to see what´s REAL. Now let´s chat a moment about this recipe, shall we? Lemon Meringue Pie is definitely one of my TOP 5 Desserts EVER! I love the stuff. And I love the massive portions they serve up in coffee shops in South Africa. Like for example at Mugg&Bean, one of my favourite South African coffee shop chains. My hubby was “gobbed smacked” when he first saw the portion sizes of the cakes they sell there. You can order half portions too, but seriously who are we kidding… You only live once, RIGHT?? 🙂
Ingredients
- juice of 4 medium sized lemons
- zest of 3 lemons
- 1 cup white sugar
- 3 eggs
- ½ cup melted butter
- (this can be substituted with Marshmallow Fluff
- 1/2 cup of white granulated sugar
- 1 tablespoon water
- 1 L egg white
- pinch of salt
Instructions
- Juice and zest the lemons.
- Whisk the sugar and eggs together well, then add the lemon juice, lemon zest & melted butter.
- Heat on 100% power for 3-5 minutes, stirring every 1 minute (mine took 4 minutes in total).
- Push through a sift to make sure there aren´t any lumps.
- Cover with cling film and let cool down at room temperature.
- When cool store in glass a jar for up to 2 weeks in the fridge.
- In a heavy bottom saucepan, add 1/3 cup sugar & water and stir to wet the sugar.
- Once mixed do not stir anymore, you can swirl occasionally but no stirring.
- Heat the sugar and water on medium-high heat.
- Dip a pastry brush in cold water and wash down any sugar crystals that form on the sides of the pot.
- At the same time start whisking your egg whites in a grease-free mixing bowl (not plastic) on medium-low until they start to foam, once foaming add the salt and increase the speed to medium-high.
- When soft peaks form slowly add the extra 1 tablespoon sugar.
- Continue whipping until glossy.
- During this process check on your sugar syrup, when it has thickened and thick bubbles have become larger and pop open slower, just before the mixture turns brown the syrup is ready. This is called the firm ball stage.
- If you don´t have a sugar thermometer you can test to see if it is ready by dropping a small bit of the syrup into a glass of cold water, it will form into a ball. When you squeeze the ball between your fingertips it will feel firm and you will know it is ready.
- Now slowly pour the syrup onto the glossy egg whites in a thin steady stream with your mixture on low, be careful not to pour on the whisk or sides of the bowl.
- Continue to beat on high until the bowl is cold, this could take up to 10 minutes.
- For every 1 cup of popcorn, add 1 teaspoon meringue + 1 teaspoon lemon curd.
- Mix well, and top with the cookie crumbs. YUM!
Notes
You can add more meringue and / or lemon curd but that would mean eating the popcorn with a spoon 😉
Leave the popcorn to cool (if possible, up to room temperature) before adding the lemon meringue ingredients, this prevents it from being soggy.

I have seriously been wanting to make this Lemon Meringue Popcorn recipe for ages. The idea came to me one day and since then it has become an obsession to make it, and share here with you guys of course! I made Italian Meringue for mine, but to make it muuuuuch easier for you guys, swop it out with Marshmallow Fluff and you´ve got yourself an super easy version! AND to make it even more authentic, I added cookie crumbs on the top!
THIS TASTED JUST LIKE LEMON MERINGUE PIE. NO KIDDING!!
I hope you guys give this recipe a try. It´s a great idea for a date night or family movie night. This will be the dessert, of course, and if I can give you a tip: make extra, because everyone is going to want seconds!!

This lemon lover would LOVE to try this. Could you clarify the second ingredient in the Italian Meringue? It says 1 Tablespoons of water + 1 Tablespoon. Should what comes after the plus sign actually be 1 teaspoon of additional water, or is it 1 Tablespoon of another ingredient? Thanks.

Woah! My mind is blown with this recipe, Johlene. I was trying to guess how you incorporated these flavors into popcorn. Love it! I’m definitely in the mood to sit down for a movie this weekend, and I’m thinking a yummy dessert popcorn could be in order.
