No Bake Orange Cheesecake Bars recipe topped with caramelized oranges…
I recently shared a Tip Hero video of their Orange Creamsicle Bar Recipe on my Facebook page that looked so delicious so I decided to make them right away. However their recipe called for sweetened condensed milk and whipping cream. I replaced the condensed milk with icing sugar (confectioner’s sugar) and used long life heavy cream that you would normally use for cooking (no whipping)… And it TOTALLY worked!
Now the thing I was most excited to learn about this recipe was that I could freeze cheesecake and it would hold its shape and it would TASTE LIKE ICE CREAM! I never knew that! Cheesecake that tastes like ice cream should be a dessert on every restaurant menu – seriously it´s that good!!
Talking about that good, Teagan finishes her PAU (University Access Test) exams today which means we can all sigh with relief because she will be officially finished for the Summer! Whoohoooo!! Wow guys it has been super stressful on our family and it really drains you. The poor child has been walking around like a zombie from hardly sleeping. Next week Wednesday she will get her results and we will know if she got enough points to study the degree she wants to… (update following)
Now let´s get back to these no bake cheesecake bars…
In the Tip Hero video they topped their bars with slices of fresh mandarin, which are great too BUT I wanted to do something else (must be the rebel in me) and decided to make caramelized orange slices. All I can say is that it was a really good decision 🙂 🙂
Ingredients
- 1 & 1/2 cups cookie crumbs (use your favourite!)
- 1/4 cup melted butter
- 2 & 1/2 cups cream cheese
- 500g icing sugar / confectioner’s sugar
- 1 cup heavy cream
- 1 cup orange juice
- 2 tablespoons orange zest
- a few drops orange extract (add more if necessary)
- 7.5 ml vanilla extract
- pinch of salt
- 2 - 3 thinly sliced oranges (1 slice per cheesecake bar)
- 1/2 cup white granulated sugar
- 5 ml vanilla extract
- 50g butter
Instructions
- Line an 8-inch-by-8-inch (20 x 20 cm) pan with foil and spray with non-stick spray.
- Stir the cookies & butter atogether until fully mixed.
- Press the mixture firmly into the bottom of the pan to create the crust. Place the pan in the freezer while you make the cheesecake filling.
- Beat the cream cheese and icing sugar together with a hand or stand mixer until thoroughly combined.
- Add the heavy cream.
- Mix in the orange zest, orange juice and orange extract.
- Remove the crust from the freezer and pour the cheesecake mixture on top. Transfer back to the freezer for minimum 4 hours or overnight until completely frozen.
- Place the sliced oranges in a hot pan and quickly sear them slightly on both sides.
- Add the sugar to the pan and cook until golden brown on medium high heat.
- Now add the vanilla extract and butter and simmer on low for 5 minutes.
- Cut in squares and top each bar with a caramelized orange slice.
- Keep leftovers in the freezer.
I seriously hope you try this recipe, and if you do, please let me know what you thought of it..? While making it I thought that lemon could work really well in this recipe too – actually the flavour posibilites are endless…

Hopefully your daughter gets the results she was looking for! I’d image that would be so stressful on her! These cheesecake bars probably made her feel better though =) I love the caramelized orange on the top, it’s so unique and I bet it tastes amazing!

Wowzers! You had me at cheesecake, but then frozen cheesecake? I mean we almost always have frozen cheesecake in the freezer just because we can’t justify eating an entire cheesecake every time I make one. But I’ve never thought about eating that cheesecake in frozen form. I clearly need to head up and do this…like now! For breakfast! Love the caramelized orange on top of this one.
