You guys will have to forgive me for the late Easter posts. This Easter Bark, and the Easter Egg Fudge I posted two days ago, were both photographed the morning before we left for Portugal (craziness!) BUT the best part is now you have a great idea of what to do with your leftover Easter candy!

The most important thing I can tell you about this bark, is that it´s so pretty. I love the pastel colours!! The other important thing you guys should know is that it´s soooooo easy to make. Easy Peasy..pudding and pie.. Who else used to sing that song as a child..? 😉
To make my Easter bark, I used white chocolate; pastel colored pearl almonds; edible pastel balls; pastel colored round confetti, and edible gold glitter.
This is such a versatile recipe and can be adapted for any occasion. Imagine dark chocolate bark with freeze dried strawberries and pink heart shaped confetti for Valentine´s Day……. or milk chocolate bark with pearnuts and a swirl of caramel to resemble a Snickers bar… the options are seriously endless!
Ingredients
- melted white chocolate (melt the chocolate in the microwave for 1.5 - 2 minutes, stirring every 30 seconds)
- mini Easter eggs (I used pastel coloured pearl almonds)
- edible balls
- edible round pastel confetti
- edible glitter
Instructions
- Line a baking pan with parchment paper making sure there is enough on the sides to lift out the bark once it has set.
- Pour the melted white chocolate in the prepared pan and make sure the chocolate is distributed evenly and in all four corners.
- Now add your candy randomly.
- Allow to set in the freezer for about 30 minutes to 1 hour.
- When solid, break the bark into pieces and enjoy!

Now it´s time to do some recipe planning for the next few weeks. I´ve got a list of things (notes scribbled everywhere, files saved all over the place) of different dessert recipes I want to make and share with you guys. I just need time. Loads of it. Anyone know where I can get some of it….? Ha!

Oh man, if you figure out where to buy more time, let me know! I actually photographed new recipes for Easter but never managed to post them…next year I guess! Sheesh. Fortunately I have lots of leftover candy so this bark is perfect!
