Chocolate Peppermint Bundt Cake
This is my official last post for Christmas 2015! How quick did Christmas come this year?
Is it just me or did we just celebrate it the other day..? How come when you want life to go slow it goes faster than lightning, but when you are a teenager and you can´t wait to leave high school, it goes slower than a tortoise (with a broken leg)..??
I NEED IT TO SLOW DOWN PLEASE!
This Christmas I have been super busy preparing some delicious desserts (opinion of the said blogger ofcourse…) for all my readers.

Don´t you just love these cute mint green mini Christmas Tree candies that I bought at Ikea? The best part is that they taste like peppermint! I mean how perfect is that! And, when dusted with icing sugar they look like a forest of mini green trees covered with snow. So cute!!
Ingredients
- 1/2 cup olive oil
- 1 cup white sugar
- 1/2 cup brown sugar
- 4 L eggs at room temperature
- 1 teaspoon peppermint extract
- 2.5 cups all purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- pinch of salt
- 1 cup plain yoghurt
- 4 ounces / 113g melted dark chocolate
- 3 tablespoons melted butter
- 1 tablespoon milk
- 2 tablespoons icing sugar
- 1 teaspoon peppermint extract
- pinch of salt
Instructions
- Pre-heat the oven to 325ºF / 163ºC degrees.
- Prepare your bundt pan with melted butter or oil.
- In a large bowl, cream together the oil and sugar. Beat in the eggs, one at a time, and then the vanilla.
- Now add the all purpose flour, cocoa, baking soda, and salt.
- Into the butter mixture, alternately add the flour mixture and the buttermilk in three additions, ending with the flour. Mix just until everything is blended together. Never overmix your cake batter.
- Mix in the peppermint extract (taste to see if there is enough peppermint flavor to your liking).
- Fill your pan 3/4 full and bake for 45 - 60 minutes, or until a cake tester or a toothpick inserted into the cupcakes comes out clean.
- Allow to cool completely before removing them from the bundt cake pan.
- Whisk all the ingredients well together and pour over your bundt cake.
- Decorate with Christmas tree candies and dust with icing sugar.

I have decided to take the next 4 days off. I am going to refrain from checking my social media accounts (let´s see how I do..) and just enjoy this time with my family & friends. Tomorrow is a busy, busy day for me. I have so many things I need to make. The worst part is that I still need to plan my final menu and go buy the groceries tonight…
