When I got my package I was super excited to open it, because Mandy the owner of the store, packaged it so beautifully and I even got a thank you card! What a sweet gesture!
If you´re planning a Christmas party for your kids this Holidays, this decoration is perfect because the kids can decorate themselves! Mandy says: “Happy Hoot Parties was born out of a love of throwing parties for my own three kids! Now let´s not minimize the importance of these cupcakes, not only are they decorated with Mint Oreos, but each cupcake is baked with one WHOLE Mint Oreo cookie inside! Yesssss, that´s one whole Mint Oreo Cookie! Can it get any better? 🙂
Ingredients
- 1 1/2 cups flour
- 3/4 cup unsweetened Dutch cocoa powder
- 1 1/2 cups sugar
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon baking powder
- 3/4 teaspoon salt
- 2 L eggs
- 3/4 cup buttermilk (make your own: 1 cup milk + 1 tablespoon vinegar/lemon juice)
- 3 tablespoons sunflower oil / vegetable oil / coconut oil
- 3/4 cup warm water
- 3/4 teaspoon pure peppermint extract
- 2 sticks (225g) unsalted butter at room temp
- 500g icing sugar
- 10 oz / 300g fullcream cream cheese
- pinch of salt
- 3/4 - 1 teaspoon pure peppermint extract (depends on taste)
- green gel food colorant I used Wilton
Instructions
- Preheat oven to 350ºF / 175ªC.
- Line standard muffin tins with cupcake liners.
- Whisk together flour, cocoa powder, sugar,baking soda, baking powder, and salt.
- Add eggs 1 x 1, buttermilk, oil, water, and peppermint extract, and beat with a mixer on low speed until smooth.
- Divide batter among muffin cups, filling each 1/3 full. Add one whole mint oreo cookie, and fill again with another 1/3 batter.
- Bake, rotating tins halfway through, until a tester inserted in the center comes out clean, 20 to 25 minutes.
- Let cupcakes cool in tins on wire racks for 5 minutes. Transfer cupcakes to racks, and let cool before frosting with the peppermint cream cheese frosting.
- Top with broken pieces of Mint Oreos! Enjoy!!
