Variety is the spice of life
My first ever savory recipe on this blog. So exciting! I´m sure alot of you have realised that I recently changed my theme to the Delightful Pro Theme of Restored 316 Designs (and I´m loving it!). Since this new design allows you to add categories to your home page, I´ve decided to broaden my post topics. Things I´ve wanted to share with you all for quite some time now and now I can!

Don´t worry! I´m still planning to keep desserts as the main theme and that will (probably) never change.. However there will be a little more variety, something for everyone.. *smile*
Easy Summer Recipes
This recipe for grilled chicken sandwich is perfect for Summer. The best part? It´s super easy to make and doesn´t take much time at all.. (comment if you like quick meals *smile*).
All you need are a few good ingredients, for example:
- slices of good quality sead loaf (or your favourite bread)
- avos that are just ripe, mashed with a little of lemon,black pepper and salt
- grilled chicken breasts made with a little olive oil, salt and ground red peppercorns
- firm but ripe red bell peppers, grilled in a super hot wok with ground black pepper, salt, ground ginger and sweet chilli sauce.
Ingredients
- Your favourite bread, I used seed loaf
- Ripe Avocados
- Fresh Lemon Juice
- Black Pepper & Pinch of Salt
- Chicken Breasts
- Olive Oil
- Salt
- Ground Red Peppercorns
- Firm and Ripe Red Bell Peppers
- Olive Oil
- Sweet Chilli Sauce
- Pinch of Ground Ginger
- Pinch of Salt
Instructions
- Pre-heat the wok or pan on very high heat.
- Cut the red peppers in strips. Here´s a video to show you how.
- Add the strips of red pepper to the very hot wok or pan, flipping them regularly. After 2 minutes, you can turn down the heat to medium low because the wok or pan would have sufficient heat to continue cooking the red pepper.
- Add the chilli sauce, ginger and salt. Mix through well.
- Mash the avo with the lemon juice, black pepper and salt and leave to one side.
- Grill your chicken breast to your preference. Marinade with your ingredients at least 10 minutes before the time. I make mine on the stove top too.
- On a slice of your favourite bread add a generous heap of the mashed avocado.
- Top it with a grilled chicken breast.
- Followed by a huge heap of perfectly grilled red bell peppers!
- Your sandwich is ready to be devoured! Yummmm!
Notes
Quantity of ingredients and spices depends on preferred taste and therefore I have omitted it.
The perfect open sandwich
I´m a huge fan of open sandwiches and salads during Summer time. I would say that this open sandwich has all the elements for a perfect Summer´s sandwich: it´s healthy, it´s tasty and it´s light.
