Mojito Jelly
This Mojito Jelly is made with lime Jelly, Mojito Mix, Lemons and Mint Leaves. Nothing to it and a great way to serve Mojito in the Summer as dessert! Especially after a heavy bbq!
Summer is finally here!
I´ve been privileged to spend some time at a hotel with my family last weekend (well.. as I´m writing this post I´m spending some time with my family at yet another hotel, Gloria Palace Amadores. What a great start to the Spanish Summer it has been..*smile*).
While I was at the first hotel (last weekend) eating dinner one night, enjoying my surroundings and feeling in the mood for all things island style, I suddenly thought how amazing it would be to make Mojito jelly (jello)! So that´s how the idea was born of Mojito Jelly – a light Summer dessert made with one of my favorite coctails! MOJITO!
When life throws you lemons..
Use them! I didn´t have limes, which is what you normally would use in a a Mojito, and all the supermarkets close to me didnt have either.. I live in a village in the mountains on an island.. everything is hard to come by here.. (but that´s a topic for another day..).
The next best thing was to use lemons. Truth be told, I actually like the contrast of colour the lemons give to this mojito dessert. Perhaps the green of the limes wouldn´t have photographed as well..
Ingredients
- lime jelly
- thinly sliced limes or lemons cut in half
- fresh mint leaves
- Mojito mix
- brown sugar (optional)
Instructions
- Make the jelly as per the instructions on the package but instead of using cold water, use your favorite chilled mojito mix
- Pour into the glasses and chill for 15-30 minutes
- Now add the mint leaves and lime or lemon slices (the jelly should just start to set, this insures that the mint leaves and lemon or lime slices stay in place)
- Put back into the fridge until completely set! Enjoy!
Notes
To make it even more authentic, you can dip the rim of your glass in brown sugar! Make sure you do this before you add the jelly to the glasses (because it is impossible afterwards)

These are sure to spruse-up your next Summer BBQ (or braai.. lesson for today – new word: braai – pronounced br-i, it is the South African name for bbq).
I love the idea of these Mojito Jellies, not only can they be served as desserts, but also as drinks instead of regular coctails. Whatever you use them for I know you´ll love them. If you love mojitos, you´ll love these!

Thanks Rose! Yes it does but you can definitely make a “virgin” version by substituting the white rum with lime juice 🙂
