Raspberry Pancakes made with homemade raspberry sauce
I´ve been wanting to make these raspberry pancakes for the longest time. To me raspberry sauce ranks higher than strawberry sauce. Don´t get me wrong, I really like strawberries, but I L-O-V-E raspberries! Especially when they are turned into a sauce and drizzled (no let´s get real.. poured) over pancakes and topped wit freshly whipped cream..
When I was shooting these raspberry pancakes I couldn´t wait for the photo shoot to end so that I could taste them! I could imagine the tartness of the raspberries pulling at my glands (I just love that sensation, don´t you!).
Raspberry Pancakes vs Raspberry Crepes
Now all you need is your favourite pancake (or crepes) recipe. When I refer to pancakes, I´m referring to crepes. That´s the way we call it in South Africa. We call American pancakes flapjacks or crumpets. No jokes! Don´t ask me why..
You could easily use an American pancake recipe for this too. Just click in the link and it´ll take you straight to Nigella Lawson´s page. Who else loves that woman!? When I grow up I want to cook and bake just like her!

Doesn´t this raspberry sauce look good?! Tell me in the comments if you prefer your raspberry sauce with or without the seeds. I love mine with the seeds because I love the texture.
Ingredients
- 1 cup frozen raspberries
- 4 heaped teaspoons white granulated sugar (or Stevia for a non-sugar version)
- 0.5 teaspoon vanilla extract
Instructions
- Add all the ingredients in a heavy bottom sauce pan.
- Bring the mixture to the boil.
- Once boiling, decrease the temperature to medium low.
- Cook (stirring often) until the consistency is thick but still runny.
- Top on your favourite pancake / crepe recipe
- Lastly top with freshly whipped cream
Notes
The whipped cream recipe is enough for 4 portions.

Wow, that raspberry sauce looks incredible! I love crepes and would much rather have them than an American pancake 🙂 I wish I had a big stack of this for breakfast, lunch or dinner!

Thanks Ashley! I´m also love breakfast and brunches. I even sometimes (when I have time.. which these days are not often) pretend that our home is a guesthouse or mini hotel and then we do a mini type buffet 🙂
I love these crepes and the homemade raspberry sauce!!! I think crepes are kinda hard to make! Took me a while to get the hang of them . . esp without a crepe pan and that tool thing that you see professionals using. . what kind of pan do you use?
Haha what tool thing? Oh now I know..I’ve seen it in a video of a crepes place in Japan! I use a good non stick pan and make sure I don’t put too much batter at one time. Oh and I only turn it when it’s 100% done on the other side 🙂

Thanks Rachel! Fresh raspberries would work really well. You could even blend them up with some icing sugar without cooking it if you feel lazy to cook anything 🙂
