Peanut Brittle Ice Cream
Peanut Brittle Ice Cream made with no ice cream machine and just a few ingredients. Super easy recipe to make at home and very delicious!
This summer it´s all about the ICE CREAM.. I wanted to stay away from the oh so irritating chant “I scream, you scream, we all scream for Ice Cream..” but I can´t.. it´s true.. we ALL do scream for ICE CREAM!! 🙂 🙂
I´m a huge fan of peanut brittle!
I knew it would taste delicious in ice cream. What could be better than homemade peanut brittle swirled into homemade (might I add.. no churn) Ice Cream..?? Right.. right??
This Ice Cream is so easy to make!
You´ll want to make it over and over again. I love the vesatility of this recipe and the possibility of the flavor options out there! In this cake the worls is your ice cream flavor and not your oyster 😉 haha
Ingredients
- 400ml cold whipping cream
- 1 tin cold sweetened condensed milk (370/390g)
- ½ cup sugar
- ¼ cup water
- ½ teaspoon vanilla essence
- ¾ cup salted peanuts
Instructions
- Prepare a baking tray with a sheet of wax paper. Heat the sugar and water on medium high heat until the mixture turns into a golden colour, put the heat off and immediately add the vanilla and peanuts. Work fast. Scoop the mixture onto the prepared wax paper and flatten with the back of your wooden spoon. Allow to cool/harden at room temperature. When cooled, put into a zip-lock bag and chop into pieces with your wooden rolling pin.
- Whip your cold cream until it forms stiff peaks, fold the tin of cooled condensed milk to the whipped cream by using a spatula. Add the chopped pieces of peanut brittle, pour into a container and freeze for a minimum of 6 hours. You don´t need to whisk the mixture during the freezing process because condensed milk is a magic ingredient when making no-churn ice cream.. the end result will be creamy, smooth and not at all icy 🙂
