
Lemon Meringue Waffles
The famous lemon meringue pie made into waffles! Rich golden waffles topped with easy miceowave lemon curd and toasted Italian meringue!
I can´t take full credit for this idea of lemon meringue waffles. It is something I ate years ago in a place called The Waffle House in the south coast of Kwazulu Natal in my native country South Africa.
I´ll never forget the first time I realised that waffles could be so much more than just cream and syrup.. At the Waffle House they sell all kinds of waffles but the ones I have the fondest memories of are there lemon meringue waffles. Oh man! Believe me they are the real deal!
How do you make lemon meringue waffles?
Just use your favourite waffle recipe or buy some in your local supermarket if you dont have time or energy to make them. Top them with this super easy lemon curd made in the microwave and last but not least Italian Meringue toasted under the broiler (grill) until the meringue is toasted golden brown!
Ingredients
- juice of 4 medium sized lemons
- zest of 3 lemons
- 1 cup white sugar
- 3 eggs
- ½ cup melted butter
- 1/3 cup of white granulated sugar
- 2 tablespoons water
- 2 L egg whites
- ¼ teaspoon cream of tartar
- pinch of salt
- 1&½ tablespoon granulated white sugar
Instructions
- Whisk the sugar and eggs together well, then add your lemon juice, lemon zest & melted butter. Heat on 100% power for 3-5 minutes, stirring every 1 minute (mine took 4 minutes in total). Push through a sift to make sure there aren´t any lumps. Cover with cling film and let cool down at room temperature. When cool store in glass a jar for up to 2 weeks in the fridge.
- In a heavy bottom saucepan, add the cup of sugar & water and stir to wet the sugar. Once mixed do not stir. Heat on medium to high heat. In the meantime whisk your egg whites on medium speed until frothy, then add the salt & cream of tartar. Increase your speed to medium high and once the mixture is glossy you can slowly add your sugar syrup (at this stage your speed should be low). Once all the sugar syrup has been added increase the speed to high and whip until the bowl is cool to the touch (this could take several minutes). Once you have topped your waffles with a good helping of LEMON CURD and then top it with a good dollop of ITALIAN MERINGUE. Heat your broiler and toast the Italian Meringue waffles for 1-2 minutes (watch it closely so that it doesn´t burn. Warning: these are DIVINE!!
So that´s how you make a Lemon Meringue Waffles! Easy no? Step to the side Mr. Lemon Meringue Pie because Mr. Waffle has taken the spotlight for the moment 🙂
