Toblerone Cupcakes
Most of the living and breathing world loves Toblerone, I´m one of those people, my favourite is the white chocolate. By far!
I made sure these tasted like Toblerone, not only do they have Toblerone on the top and does the frosting include melted chocolate, I popped a little Toblerone in the batter of each one too 🙂
Now that´s what I call a Toblerone cupcake!
I got these mini Toblerones as a gift (no I wasn´t sponsored by Toblerone but hey I´m totally open to it.. so here´s a shout out to them *smile*) and just knew I had to make something with them. So I did. These cupcakes!
Ingredients
- 200g white sugar
- 0.5 cup sunflower oil
- 4 L eggs
- 1.5 teaspoon of vanilla extract
- 120g flour
- 80g pure cocoa powder
- ¼ teaspoon of grounded cinnamon
- pinch of salt
- 1 teaspoon baking powder
- 2 tablespoons full cream milk
- 15 mini Toblerones
- Melted and cooled Toblerone (about 15 - 25 mini Toblerones)
- 250g unsalted butter at room temperature
- 250g icing sugar (sifted)
- 0.25 cup pure cocoa powder (sifted)
- pinch of salt
- 2 heaped tablespoons full cream cheese (cold)
- 1 teaspoon vanilla extract
Instructions
- Pre-heat your oven to 175ºC / 350ºF.
- Prepare your cupcake trays with your liners.
- Sift all your dry ingredients together and leave to the side.
- Meanwhile blend your sugar and oil together for a few minutes, add the eggs 1 x 1 then the vanilla extract.
- Add your dry ingredients slowly, lastly add your milk. and blend for 30 seconds until well combined (never overmix your cupcake/cake batter).
- Scoop your batter with an ice cream scoop (1 scoop per liner) and place a mini Toblerone in the middle, pressing it down to make sure it´s covered by the batter.
- Bake for 20 - 22 minutes. Let them cool for 5 minutes, then remove from the cupcake tray and cool completely on a rack.
- Beat your butter until light and fluffy.
- Add the rest of your ingredients and blend on high until creamy and fluffy.
- Lastly add your cream cheese 1 tablespoon at a time and mix it in slowly.
- Increase the speed until high and blend for a further 15 seconds. If you overblend at this stage your frosting might curdle.
- Frost your cupcakes the way you like and top with another mini Toblerone. I also used chocolate vermicilli to decorate the sides.
