Chocolate Lacasitos Layer Cake
Lacasitos Chocolate Layer Cake made with Lacasitos chocolate, chocolate frosting and my delicious chocolate sponge cake recipe..
All you fellow dessert/food bloggers will know when an idea for a recipe turns out how you imagined it would, you can´t wait to share it with everyone! A while ago I was eating a bag of Lacasitos fruit chews, loving the flavour and colours and thinking “how I can bring these colours alive in a cake?”..
I wanted the colours of the Lacasitos fruits to be on the outside as well as on the inside of the cake.. I´m super happy with the end result!
Ingredients
- 1 cup sunflower oil
- 400g white sugar
- 8 L eggs at room temperature
- 2 teaspoons vanilla extract
- 300g sifted all purpose flour
- 100g sifted pure cocoa powder
- 2 teaspoons baking powder
- pinch of salt
- 250g of unsalted butter at room temperature
- 300g of sifted icing sugar
- pinch of salt
- edible gel colourants (3 different colours)
- 400g chopped dark chocolate (I use 50%) or dark chocolate chips
- 400ml full cream
- 0.5 tsp vanilla extract
Instructions
- Pre-heat the oven to 175ºC/350ºF.
- Prepare your molds with melted butter and line the bottoms with cut out wax paper circles.
- Beat your sugar and oil for about 2 minutes then add your eggs 1 by 1.
- Now add your vanilla. Lastly add the sifted dry ingredients and make sure not to overmix!
- Fill the molds ¾ of the way and bake for 35-40 minutes, depending on your oven.
- Make sure the cakes are cooled completely before removing them from the molds.
- Cut each cake into 2 layers.
- Add all the ingredients and beat well on high in your stand mixture until the frosting is light and fluffy. Divide the frosting into 3 bowls and add a colour to each bowl.
- Mix the colour through well.
- Heat the cream in the microwave for about 2 minutes.
- Add the chopped chocolate and allow to stand for 2 minutes.
- Add the vanilla extract and mix well.
- Allow to cool to room temperature and then cool completely in the fridge (best to leave overnight).
- Once set, allow to heat up slightly, then add to it your mixer and blend at medium speed until your ganache forms a frosting like consistency and is light and fluffy.
- Fill your cake with the 3 different colours of buttercream frosting (add the 3rd colour on the top level)
- Frost with the ganache on the outsides and top and leave to set before adding the Lacasitos!
- Allow to cool/set before cutting.
Notes
Note #1: I used a 20cm/7-8 in mold. To get 3 layers of chocolate sponge, like I did, you would need to bake 3 of these molds. 1 Mold yields 2 layers. Therefore you would need to times the chocolate cake recipe by 6.
Note #2: You can add some sifted icing sugar at the end if you feel that your frosting is too bitter, it all depends on taste. Just make sure to blend it in well.
Note #3: I added 250g of butter without salt at room temperature. Adding this makes the frosting easier to spread especially in hot weather.
I just love the 3 colours I chose and must say I did a pretty good job by matching the buttercream colours with the Lacasitos fruits.. (allow me to give myself a pat on the back.. lol).
Don´t forget to use the Lacasitos to the outside of your cake (you could totally use M and M´s or Smarties etc.). This cake doesn´t only look pretty, it tastes pretty good too!
