Guys this is seriously the best CARROT CAKE Ever!!!
I´ve made layered carrot cake and I´ve made carrot cupcakes (with a buttermlk glaze!) and every time I find myself loving it even more. What is it about carrot cake (topped with cream cheese frosting) that we just can´t get enough of?!
This recipe is super simple. You just need one bowl to do all the mixing (except for the cream cheese icing) AND once the cake is baked and cooled there´s no need to remove it from its dish.. You simple PLOP the cream cheese icing right on there and VOILA you have the best carrot cake ever!!! You can also add sultanas or seedless raisins but I like mine without.
Ingredients
- 2 cups flour
- 2 tsp cinnamon
- Pinch of salt
- 2 tsp baking soda
- 1.5 cup brown sugar
- 1 cup buttermilk (1 cup fat free milk + 2 tbsp vinegar)
- 0.5 Cup sunflower oil
- 2 tsp vanilla extract
- 3 L eggs
- 2 cups grated carrot
- 1 cup toasted coconut
- 1 cup crushed pineapple
- 1 cup chopped walnuts
- 1 tub Philadelphia cream cheese light
- 2 tsp vanilla extract
- 250g icing sugar
Instructions
- Prepare your buttermilk and put to one side.
- In a large bowl whisk together the first 5 ingredients on the list.
- Now add the liquids (including the eggs).
- Lastly fold in the carrots, coconut, pineapple and walnuts.
- Bake in a prepared rectangle dish at 350°F/175°C for 55 - 60 minutes.
- Allow to cool before icing.
- Use an electric hand or stand mixer to mix all the ingredients well.
- Top on the cooled carrot cake.
- Top with more chopped walnuts.
- Leave in the fridge until serving time.

I wanted to take more photos but the time I got to take the photos most of my natural light had already dissapeared. BUMMER! Hopefully these photos will give you an idea of how good this cake really is…
