This is my take on the oh so famous Banoffee Pie.. I replaced the dulce de leche with salted caramel and instead of making a pie, I served them in these cute mug-glasses π
Esta es mi versiΓ³n del tan tan famoso Banoffe Pie .. He sustituido el dulce de leche por caramelo salado y en vez de hacer una empanada, yo los servΓ en estas lindas tazas de cristal π
So easy to make these and serve them up to your guests or simply to enjoy on a romantic night with that special person in your life..

SALTED CARAMEL BANOFFEE in Glass Mugs!

INGREDIENTS (makes 4)
1st layer:
2nd layer:
3rd layer (salted caramel):

METHOD:
1st layer:
Combine all the ingredients for this layer and mix well. Spoon 2 heaped tablespoons in each glass and press the mixture down firmly. Leave in the fridge to set.
2nd layer:
Dice the bananas and share them between the 4 servings.
3rd layer:
Heat the sugar on medium high heat until the sugar has melted and itΒ΄s a deep amber colour, leave it on the stove but put the heat down and add the cream slowly.. take CARE at this point because itΒ΄s very HOT! Let to cool at room temperature and leave to further set/harden in the fridge (tip: make this the night before to ensure a nice thick consistency). When ready add 2 tablespoons on top of your diced banana.
4th layer:
Put your mixing bowl, whisk attachment and cream in the freezer for 15 minutes. Remove and pour the cream into the cold mixing bowl, start beating the cream on medium until it starts to froth, gradually increase the speed, when the cream has reached soft peaks, slowly add your granulated sugar and continue to beat on high until the hard peak stage, quickly add your vanilla and beat on high just until incorporated.. Fill your piping bag with your favourite nozzle and pipe a generous amount on top of the salted caramel sauce. Top with more diced banana, caramel and chocolate sauce! YouΒ΄re ready to go bananas..lol..sorry for the pun..just had to.. π

Not sure if you guys saw the cute homemade bunting in the background.. so easy to make and it made a world of difference to my photo setting.. All you need is your favourite colour or patterned paper, some bakerΒ΄s twine, cord or string, glue and scissors and you ready to go..

I have never, ever, ever heard of banoffee before, but after seeing that, I need this in my life!!! And, I like Banoffee your way better – no matter what the other looks like! I’m loving the caramel, bananas, cream – YUM! This is sssooo PINNED!
Hi this is how a banoffee pie looks like, believe me it´s really good.. it normally has a biscuit crust, sliced bananas and dulce de leche (cooked condensed milk) and topped with whipped cream!
