
Banana Mini Bundt Cakes

It´s Monday and I must be honest I´ve been taking my time with this post.. I´m super tired and although I´ve done alot today, I wonder how much of that was actually productive?
After I made the Honey Rum Cupcakes, I had left-over frosting and decided to freeze it. This was the 1st time I used leftover frosting after freezing it and I must say it worked better than I thought it would. I defrosted it in my microwave at 20% power for 1 minute and then beated it on high in my stand mixer.. I realised the taste of the honey rum was stronger (somehow the freezing process made the alcohol more potent) so I added more icing sugar and it worked out perfectly 🙂
How did I make them?
To make these banana mini bundt cakes I used the same recipe I used to make my banana loaf cake recipe but added a third cup of buttermilk right at the end because I wanted the consistency of my cake to be more “sponge” like than bread like. Hope that makes sense!

These bundts are so pretty! I freeze everything but have never thought to freeze leftover frosting. Great idea!

Hola Tatiana! Gracias por tu comentario! Si tienes un molde de silicona como el mío, necesitas asegurarte que el molde esté frío antes de sacarlos. Normalmente espero hasta que el molde este frío y después pongo el molde en el congelador durante unos 15 minutos, de esta manera puedes sacarlos con mínimo problemas 🙂 Dime si funciona? Un besito x
