Mini. Not mini Cooper, not mini skirt, not mini (minnie) Mouse but MINI PUMPKIN BUNDT CAKES! Filled with pumpkin puree and rich dark chocolate chips. And, and.. topped with a delicious cinnamon cream cheese frosting! Need I say more..?
Mini Pumpkin Bundt Cakes with Chocolate Chips
They are not just yummy, they are Superrrrrrrrr Yummy!! And so EASY to make too 🙂
AND I like easy. When you´re a Wife, Mom, run a Food Blog, Manage Social Media platforms for other Bloggers, clean your own Home, etc etc you want EASY! Right?
I just love individual style desserts like these, And this mini silicone bundt cake mold is perfect for this! I have something to share with you, a heart to heart, I have a thing for bundt cakes, big or small, I think they are beautiful and rustic.. weird he? 🙂
Speaking of beautiful.. did you guys see my post that I shared about our recent trip to Italy? I can now say three words in Italian: PIZZA, PASTA and CIAO! Ha!
Ingredients
- 1 cup white sugar
- 1 cup brown sugar
- 1 cup olive oil
- 3 L eggs at room temperature
- 3 cups all purpose flour (no sifting needed)
- 2 teaspoons baking soda
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- pinch of Salt
- 2 cups of pumpkin puree I made my own.
- 1/2 - 1 cup chocolate chips
- 1 tub 8 oz / 226 g cream cheese at room temperature
- 1/4 cup unsalted butter at room temperature
- 400g sifted icing sugar
- pinch of salt
- 2 teaspoons ground cinnamon
- 1/4 cup milk
Instructions
- Preheat your oven to 175ºC/350°F.
- In a large bowl, combine the sugar and oil until blended. Add the eggs, one at a time, beating well after each addition.
- Combine the flour, baking soda, salt and ground cinnamon.
- Add to the egg mixture, alternating with the pumpkin, beating well after each addition.
- Fold in the chocolate chips.
- Transfer the batter to greased mini bundt cake molds.
- Bake 25 - 30 minutes or until a toothpick inserted near the center comes out clean.
- Cool completely before inverting onto a wire rack.
- Mix all the ingredients well together with a hand held beater or a stand mixer.
- Pour over the bundt cakes. Serve immediately or keep in the fridge until time of serving.
- These can be re-heated in the microwave for 15 seconds before serving.
- Makes 24 small bundt cakes / 1 regular sized bundt cake pan / 26 cupcakes
