Baked Coffee Cheesecake Recipe with Hazelnut Crust

In this recipe I show you how to make an easy pie crust – with a twist – we´re adding hazelnuts to the mix! The addition of hazelnuts, makes this crust super nutty and superrrrr yummy!
Let me just say this is the best cheesecake recipe I´ve ever made! Hands down!
I love the addition of the coffee! It takes a normal cheesecake from “it´s ok” to “oh my word this is delicious!”
I haven´t made many baked cheesecake recipes before because I´m always scared that it cracks on top, but the trick I´ve learnt is to make it with a water bath you. This makes all the difference! Look at the top of this cake, totally smooth!
Ingredients
- 200g chopped toasted hazelnuts
- 800g graham crackers or digestive biscuits
- 125 g melted butter
- 2 x 300g (8 oz) cream cheese at room temperature
- 2 eggs at room temperature
- 1 cup brown sugar
- 0.25 cup full cream
- 0.25 espresso or strong coffee
- 0.75 tablespoon vanilla extract
- 2 tablespoons flour
- pinch of salt
- 200g dark chocolate (50 - 70%)
- 200ml full cream
- 0.5 teaspoon vanilla extract
Instructions
- Bake in a preheated oven at 175ªC/350ªF for 10 minutes. Remove and leave to the side.
- Spray a 9” springform pan with non stick spray, wrap the outside of the pan a couple times with some aluminum foil and place the pan in a large roasting or baking pan big enough to fit the springform pan comfortably.
- In the bowl of a standing mixer fitted with a paddle attachment, cream the cream cheese for about 2 minutes, add the full cream, vanilla and eggs and mix for an additional 2 minutes.
- Add the coffee, sugar, salt and flour and mix until the mixture is really lovely and smooth.
- Pour the mixture in the prepared crust.
- Add enough hot tap water in the baking pan (around the cheesecake) to come up half way up the sides of the cheesecake and carefully transfer it to the oven.
- Bake the coffee cheesecake for 1 hour or up to 1 hour and 10 minutes, the sides of the cheesecake should be set but the center should slightly jiggle a bit (very slightly) at this point, turn the oven off, open the door of the oven just a bit and let the cheesecake sit in the partially opened oven for 1 hour.
- Allow the cheesecake to cool at room temperature for a few hours before transferring it in the fridge to cool overnight.
- Top with the dark chocolate ganache and decorate with whole hazelnuts.
- Leave to set further in the fridge for 1 - 3 hours.
- Remove from the springform pan and serve
- Heat the cream in the microwave until just before it boils (about 2 minutes).
- Add the chopped dark chocolate and allow to stand for w minutes before mixing.
- Mix well, add the vanilla extract and pour over the cheesecake

Did you brew the coffee or just add the grounds?
I brewed the coffee. I have a Nespresso coffee machine, the one that uses capsules. I normally use the espresso one for my desserts 🙂
