Made with an easy homemade pie crust and a spiced apple pie filling…

When a friend invited us to a dessert Christmas party I thought it would be nice to make apple pie but instead of a huge pie I opted instead to make these cute individual portions in my cupcake tin.

Perfect to grab off a plate!

There are less than 2 weeks left until Christmas and I dont even have my Xmas tree up yet..
The reason.. we can´t find our box (a verrry BIG box) with our Christmas decorations because of our recent move. Decorations that we have accumulated throughout the years and some with huge sentimental value, bought on travels, received as gifts..

I really hope we find them soon!

Spiced Homemade Mini Apple Pies

Spiced Homemade Mini Apple Pies

Ingredients

    Pie Crust
  • 3 cups of All Purpose Flour (sifted)
  • 280g Cold Butter, cut into cubes
  • Pinch of Salt
  • 6 to 10 Tbsp of Ice Water
    • Apple Pie Filling
  • 2 Apples, peeled, cored and finely diced
  • 1/2 cup of Granulated Sugar
  • 2 1/2 Tbsp of All Purpose Flour
  • Zest of ½ of an Orange
  • 2 tsp of Lemon Juice
  • 2 tsp of Ground Cinnamon
  • 1 tsp of Ground Ginger
  • 1/2 tsp of Ground Clove
  • Pinch of Salt

Instructions

    Pie Crust
  1. In a food processor add the flour and salt, now add the butter and pulse about 10 times or until the butter is about the size of peas and distributed evenly. Continue pulsing while adding 1 tbsp of ice water at a time until the dough comes together when pinched between your fingers. On a lightly floured surface quickly form into a disk, wrap it in cling wrap and pop it in the fridge for an hour before using. (The ingredients & method for the filling continues after the photo).
    2. Apple Pie Filling
  2. Preheat the oven to 190ºC.
  3. Lightly grease a 12 hole muffin/cupcake tray with softened butter.
  4. To make the filling, add the apples, sugar, lemon juice, salt, cinnamon, ginger and cloves, flour and orange zest in a bowl and stir together to mix everything well.
  5. Line the bottom of each hole with a larger piece of dough (use a cookie cutter to cut out circles) and make sure you place it properly so each one comes up the sides. 
  6. Add a little filling in each one, brush the tops of each one with egg wash and top it with the smaller circle of dough or you could do the basket weave effect which I made.
  7. Brush the tops with egg wash and sprinkle the top with a little raw sugar.
  8. Bake them for about 25-30 minutes or until golden brown.
  9. Allow to cool completely before serving.

    Ole tú!!!! Tienen una pinta tremenda! En Inglaterra son típicas las mince pies que son muy parecidas a estas. Tengo muchas ganas de hacerlas pero tienes que hacer el relleno con unos meses de antelación. ¡A ver si paar el año que viene me acuerdo!

      Sí! Las mince pies tienen la misma técnica pero el relleno es diferente: pasas, grosellas, confitura/cáscara de naranja, brandy etc.. Son muy parecidos en mi pais (Sudáfrica) también 🙂 y a mi me gusta mucho! El año pasado lo hice y todo el mundo encantaron porque el sabor es increíble y perfecto para los días frías 🙂
