The thought of this STRAWBERRY PANCAKE MILKSHAKE came to me one morning when I was munching on a stack of pancakes in my small apartment kitchen, here in Spain where we live.. I was like “this would be a great idea for a milkshake” and boy (well girl in this case. Ha!) was I right!
I remembered I also had a pack of frozen strawberries in the freezer and set out to make my Pancake Milkshake! Take note if you don´t have strawberries, you can easily replace them with any kind of berries, Raspberries will work really well too. AND if you don´t have frozen strawberries you can easily replace them in the recipe with fresh or canned. Jam or Syrup could work too but you would need to adjust the sugar quantity in the recipe.
Ingredients
- 1 1/2 cups flour
- 3 tablespoons sugar (you can lessen this amount if you wish)
- 1 tablespoon baking powder
- Pinch of salt
- 1 1/4 cups milk
- 1/4 cup melted butter
- 2 large eggs lightly beaten
- 1 cup frozen strawberries
- 3 tbsp white granulated sugar
- 1 tsp cornstarch like Maizena
- vanilla ice cream
- sugar
- low fat milk if necessary
Instructions
- Mix your eggs and sugar together,
- Add the melted butter
- Add the flour and salt
- Lastly add the milk
- Don´t over mix the batter
- Add the frozen strawberries to a heavy bottom saucepan along with the sugar
- Bring to the boil, stirring regularly
- Reduce the heat and cook on low for 10 minutes
- Strain the strawberries and add the cornstarch to the syrup and thicken over medium heat for minutes
- Add the strawberry pulp again (or omit if you prefer a smooth consistency).
- Add 1 pancake,
- 1/2 cup strawberry compot/syrup,
- 1 - 2 tablespoon white sugar
- 2 cups of vanilla ice cream
- milk if necessary
- to a blender and mix well togehter until you can´t taste any pieces of pancake
- Serve immediately!
My hubby and Teagan (a.k.a. the teenage daughter) loved this!! Luca wasn´t keen to even try it. He has become quite picky when it comes to trying new stuff, which I´m not happy about but that´s a story for another day.. #momproblems
To decorate the inside of my mason jar mug I strained some of the strawberry compot I made, and swirled it on the inside of the mug. As a child, I always thought how neat it looked when they served milkshakes in this way 🙂 🙂
This weekend we are celebrating Luca´s 6th birthday party with all his little friends. The theme is Paw Patrol! I can´tr wait to share it with you guys on the blog. His actual birthday was on the 7th but we decided to celebrate his party the next weekend, which turned out to be a really good idea because it took away the stress of a party on the actual day and allowed us to enjoy the time together as a fam 🙂
Oh before I forget, what do you guys think of my new DIY background boards?? I bought them on Etsy from Country Contessa Photo and got them printed out by a digital printer who printed them for me on adhesive paper in a matt finish. I then stuck it on the side of my old background wooden boards that I don´t use. AND this is the result! I ´m in love! Even the printer told me that the resolution was amazing quality!! Since then I´ve purchased two more and will be picking them up from the same printer on Friday. The whole board cost me aprox. 25€ (about $28.50).
