Red Velvet Cupcakes with cinnamon buttercream frosting
Let me just tell you guys, I love this combination! Red Velvet and cinnamon are suppose to go together!
Recently I was invited to anannual Christmas party and since the colour scheme was red with some accent colours of gold and white, I offered to make these red velvet cupcakes with cinnamon buttercream frosting.

Red Velvet Cupcakes with cinnamon buttercream frosting
Ingredients
- 2 & ½ cups of All Purpose Flour
- 1 & ½ cups of Sugar
- 1 tsp of Baking Soda 5g
- Pinch of Salt
- 2 tablespoons of Cocoa Powder without sugar
- ¾ cup of Vegetable Oil
- 1 cup of Buttermilk
- 2 Large Eggs
- 1 tspn of Red Food Color (I used SugarFlair Extra Red )
- 1 tsp of White Vinegar
- 1 tsp of Vanilla Extract
- 300 g tub of full-cream cream cheese (leave in the fridge until the last moment)
- 250g of butter without salt
- 2 teaspoons of cinnamon
- 2 & ? cups of icing sugar (sifted)
- Pinch of salt

Instructions
- Preheat your oven to 175ºC and line your cupcake tray liners. You don´t need a stand mixer for this recipe as it´s super easy to do by hand using a whisk!
- In a large bowl place the sifted All Purpose Flour, Sugar, Baking Soda, Salt and Cocoa Powder together and whisk until thoroughly combined.
- In another bowl, add the red food color and the vinegar to the vegetable oil and then add the buttermilk.
- Pour all of these liquid ingredients including the eggs and vanilla into the bowl with the dry ingredients and whisk the mixture to combine.
- Do not over mix or this will develop gluten which will lead to a tough cake.
- Divide the batter amongst your liners and bake immediately for 20 minutes or until a skewer comes out clean.
- Cream the icing sugar and butter together until light and fluffly, add the cinnamon and salt and mix well. Now mix the cream cheese until just mixed to ensure it keeps its volume.
- Now you´re ready to pipe!

I love red velvet! A good red velvet cupcake is in my top 3 favorite flavors for sure, but I’ve not tried with a cinnamon frosting. I think it’s a perfect twist for a Christmas cupcake!
