Lemon Jelly Cake. Heard of a cake or frosting made of jelly (jello)? Well it exist and here´s the evidence! I simply love the zingy taste of this cake…
I was doing a search for lemons and that´s when I got the idea to make jelly frosting, which led me to a cake recipe made of jelly as well!
This frosting couldn´t be easier to make! The trick with adding the jelly powder to your cake batter, is to make sure you add extra liquid. You can easily use your favourite cake recipe and adjust it slightly by adding the extra liquid. The jelly seriously adds a zingyness to your cake especially when you add it to the frosting too. It´s so good!
To decorate the cake I added some sour striped coloured candy strips to the bottom and 4 swirls on the top. I also added some yellow sanding sugar. On the tops of the cupcakes, I used the same candy but used it to cut out flags. I think they look so cute!
Then as you guys can see on the photo above, I added the leftover rainbow striped candy to the top of the glass drinking jars with pretty coloured straws. These are ideal for kids parties!
Ingredients
- 250g butter without salt at room temperature
- 1 cup granulated white sugar
- 1 & 1/2 pack of jelly (jello) powder
- 4 eggs
- 4 cups of self raising flour/4 cups of regular flour + 4 teaspoons of baking powder
- pinch of salt
- 1 cup of full cream milk
- 2 packs of lemon jelly (jello)
- 2 egg whites
- 2 teaspoons of vanilla essence
- 1 & ½ cup white sugar
- 1 cup of boiling (not hot) water
Instructions
- Mix together the butter, sugar and jelly (jello) until light and fluffy. Add the eggs 1 x 1 and mix well.
- Add the flour and milk. Don´t overmix the batter.
- Bake the cupcakes for 25 min and the cakes for 35 minutes at 180ºC / 360ºF.
- Add all your ingredients in your stand mixer bowl (no plastic bowls, only stainless steel or glass). Start your mixer on high and immediately add your boiling water (it needs to be boiling as we are working with raw egg whites).
- Cover with a towel and continue to beat on high for 5 minutes.
- Should you live in a high humid area (like I do), it´s best to keep the frosting refrigerated.
- Frost and decorate to your liking.
I encourage you guys to try this recipe, my favourite by far is the frosting.. I could eat spoonfulls of it (and to be completely honest I did..). Don´t judge. ha!
