A delicious and easy Guava Fridge Tart Recipe
I know Summer is over, I know everybody´s probably posting pumpkin and apple recipes, but since South Afica is in the Southern Hemisphere, and I´m visiting here at the moment, I´m posting this Guava Fridge Tart Recipe because everyone here has been celebrating the start of Spring and they´re getting even more excited about the promise of Summer!
This easy fridge tart recipe is made with evaporated milk, red jelly (jello), tinned guavas and coconut biscuits. That´s it! You can also make this fridge tart into a healthy/skinny version by replacing the full cream evaporated milk with a lighter version and the red jelly with a sugar free version. Then you could replace the biscuits with a diet version or leave it out completely..
So those of you who follow me will know I´m in South Africa currently visiting friends & family. It wasn´t a planned trip. A few weeks ago I got a phone call from my sister saying that my Mother was taken up in hospital with a very bad lung infection and was really ill.
A couple days later she seemed to improve but shortly thereafter she went into a natural coma because her body wasn´t getting rid of the carbon dioxide in her lungs and that was poisoning her blood stream. It became a whirlwind of organizing, paperwork, my daughter´s passport was in process in South Africa and we needed to fly to Madrid to organize her an emergency travel certificate, packing, etc..
My mother has since then improved drastically and was sent home from hospital, after nearly 3 weeks in ICU, 1 week in a normal ward to recuperate thereafter and as transition period before going home. During her time in ICU she was declared critical 3 times, one time we were phoned at 7am in the morning and told we all needed to come to the hospital urgently because she had suffered a very bad night and they feared the worst.
During all this time I had many friends and family who prayed for her, here in South Africa, as well as my friends and pastors in our church in Spain. The way she recovered could only be described as a miracle and I´m so thankful to God to give her to us for a “little” while longer. I´m not sure when it will really be her time to go but we get to celebrate some more special moments with her and we are so thankful!
Now for the actual reason why I´m posting today.. this super easy guava fridge tart that my sister´s boyfriend made for us. I was going to help him (really I was) but in the end I was on the recliner seat while he was slaving off in the open plan kitchen..lol.. But.. I did take notes to see how he made it!
His mother passed on the recipe to him so it´s a family recipe.
Everyone say hi to my sister´s boyfriend *smile*.
Ingredients
- 1 packet red jelly/jello (this could be strawberry, raspberry or cherry jelly)
- 1 cup hot water
- 1 tin evaporated milk (you could use the light version too to make this a skinny dessert)
- 2 packets Tennis biscuits (these are very famous here in South ASfrica and have a coconut flavour. You could use a coconut type biscuit where you live or alternatively
- you could use Graham Crackers in the US or digesitve biscuits in the UK).
- 1 large tin of guavas (or fresh, ripe guavas) cut in small pieces or alternatively liquidised if you don´t like the pieces and prefer your tart to be smoother.
Instructions
- Add 1 cup of hot water to the 1 packet of jelly and allow to cool to room temperature.
- Beat the evaporated milk until it has thickened but still runny.
- Add the cooled jelly and guava to the beated evaporated milk and fold in slowly.
- Line a dish with your biscuits, making sure it covers all of the bottom of the dish and the sides.
- Pour the liquid mixture over the biscuits and set in the fridge for a couple of hours.
- ENJOY!
I can´t wait to share some exciting day trips I took while I´ve been here in South Africa and the delicious desserts I saw, consumed and loved along the way! Be on the look-out for that post!
Until next time guys, let me know in the comments what your favourite family dessert recipe is..

Can it be made the day before serving?
Also please comment on my earlier question about using the syrup and what is meant by a large tin?
Thanks. I really want to make it.
Hi Joy, yes it can be made a day before serving. By large tin I mean the normal sized tin I meant the biggest size that is available.
I just had a guava and it made me crave the guava tart my grandmother used to make for big gatherings (normally my grandfather’s birthday). I used to eat very little dinner and birthday cake so that I could have more guava tart. 😅 A quick Google search brought me to your recipe; your tart looks very similar to my grandmother’s, although I’m sure she would’ve used condensed milk but I don’t want to put that much sugar in the tart. I’m definitely going to try your recipe for my sister’s upcoming birthday! Can’t wait!
Oh my, I just went on a trip down memory lane with my sisters, about our mom’s unforgettable cooking skills and how we didn’t pick up her tips and secrets on things she used to make when we were children. The photos in this article is exactly how I remember my moms guava fridge tart. And the recipe is also like the one my mom used. I will definitively save this of this recipe and share it with my sisters. Thanks a lot.
I live in South Africa, and my mom used to always make this when i was younger (she passed away when i was 18) i searched high and low for her recipe, asked family members, and tried the recipe they gave, a few times, but it just never tasted like hers.
I took a chance and googled and came across yours, sooo weird to see others posting about this, this tarte is just amazing, so excited to try your recipe, the recipe i got from my aunt is alot like yours, only difference is, with the tin of guavas, we use the syrup in the tin too, we mix the jelly powder and the syrup together and heat it up in the microwave for a bit, it thick and rich xx
I’m thinking of using this recipe but have a few questions. My canned guavas are in syrup. Should I use the syrup or not? You say to use a large can of guavas. Mine is 410g. Is that enough? I’m also thinking of just having the filling without the biscuits and setting in small ramekins. What do you think?
Cheers
Joy
I am also from SA. It’s so nice to see this recipe on an international site. I think most South African families have some version of this tart. I remember my excitement as a child when I saw that my godmother made one when we visited our cousins. I’m making it this weekend, even though we’re slowly heading into what passes for winter here in Namibia. Thanks for sending me on a trip down memory lane.
This sounds delicious. I am going to try it. My can of guava halves in syrup is 410g. Is this enough? I see you say one large can. How large is large? Do you think you could make this filling without the biscuits and then fill prepared tart shells?
Thanks for sharing.
Shouldn’t the evaporated milk be chilled before beating? I always chill mine overnight and it gives 4 to 5 time the volume (if not more).
You can definitely do that 🙂
I made this but when I poured the mixture in, all the biscuits raised to the top 🙁
Sorry to hear about your mom – hope she continues to get better. This recipe looks so yummy. Thanks for sharing it at the #HomeMattersParty – hope to see you back again next week.
Thank you so much Chelsea 🙂
I’m still in summer mode over here – no apples and pumpkin for me yet 🙂 Love this tart!
Thanks Ashley, I just don’t want it to end yet 🙂
I am so happy to hear your mom has improved greatly Johlene. And I truly hope you are having the time of your life in South Africa. Not sure if I missed a post but, I can’t wait to hear your stories of the trip and see all of your photos as well :). Wonderful easy recipe as well girl.

Oh my gosh seeing your recipe reminded me how much I love guava and how long it has been since I’ve had it! This tart would be a great way to get my fix in!
Thanks Shelby! I’m a huge fan of guava too!!
This looks awesome! I am not quite ready to post apple and pumpkin things yet either, so I am all for making summer last!
Thanks Rachel, let’s keep the Summer fire burning as long as we can! 🙂
So happy to hear your mom is on the mend! This tart looks so beautiful and refreshing!
Thanks Ashley she’s doing so much better! 🙂
