Funfetti Cake Batter ice cream sandwiches

When I discovered this recipe I was so excited, this recipe is so easy and reminds me of the best ice creams I have tasted. The ones you simply can´t get enough.. sweet and creamy..
Ingredients
- 400ml cold whipping cream
- 1 tin (370g) cold condensed milk
- ¾ cup sifted white flour
- ¼ cup white sugar
- ½ teaspoon baking powder
- pinch of salt
- 2 tablespoons melted butter without salt
- 1 teaspoon vanilla essence
- ½ cup funfetti
- plain wafer biscuits
Instructions
- Whip the cream until stiff peaks form, fold the cold condensed milk into the cream. Now fold in the rest of the ingredients. Pour into a container suitable for freezing (I used my bread baking tin) top with some more funfetti. Freeze for minimum 6 hours. You don´t need to whisk the mixture during the freezing process because of using the condensed milk as it prevents cristilization. When the ice cream has frozen, cut squares with a sharp & long knife dipped into a jug of hot water before every cut. Place inbetween 2 wafer cookies and ENJOY! Be warned these are very very tasty!

These ice cream sandwiches are so easy to make and hardly takes any prepping time at all.. and if you like cookie dough ice cream you will like this flavour of CAKE BATTER as well!

These sandwiches look so amazing! I am Ukrainian and we sometimes eat a European brand of ice cream called Dadu, and they have these types of wafer ice cream treats. They are delicious, and now I need to try to make these!

So pretty and so easy! Gotta love that. I was wondering…what did you freeze the ice cream in in order to cut it into squares? A Pyrex rectangular dish? And if so, did you line it with plastic wrap or parchement to pull out the ice cream more easily in order to cut it? Pinning!

Yes Jelli, I froze it in a cookie sheet with cling wrap 🙂 ps. a pyrex dish would work too!
