So the weekend is over and if I´m to be honest, I feel like I still need a weekend.. its come, its gone and I´ve not rested! I´m the only one who sees the weeks coming and going all why life passes by me.. the statement TIME FLIES is totally true!?!
El fin de semana ha terminado y si he de ser sincera, siento que todavía necesito un fin de semana .. viene, va y no he descansado! Yo soy la única que ve la semana venir e ir y ver pasar la vida .. el dicho “EL TIEMPO VUELA” es totalmente cierto!!
This weekend I had to execute some orders and find time inbetween to spend time with my husband & kids, meet with friends, clean my house.. etc etc etc (etc etc etc)..
Este fin de semana he tenido que hacer algunos pedidos y encontrar entre medio tiempo pasar tiempo con mi marido y los niños, reunirme con amigos, limpiar mi casa .. etc etc etc (etc etc etc) ..
These double chocolate cupcakes made with buttermilk & cocoa were frosted with melted white chocolate frosting which I coloured pink as it was for a special 10 year old girl (Brianna) who absolutely loves everything pink and sparkly 🙂 I remember myself at that age, one Christmas I got a set of Tinkerbell makeup and perfume and I was besides myself of joy.. 🙂 🙂
Estos cupcakes de doble de chocolate hecho con buttermilk y cacao fueron cubiertos con chocolate blanco derretido coloreado previamente en rosa, ya que era para una niña de 10 años especial (Brianna), que le encanta todo lo rosa y brillante 🙂 Recuerdo a esa edad, una Navidad que me dieron un conjunto de maquillaje Tinkerbell con un perfume y yo tenía una gran alegría .. 🙂 🙂
These cupcakes were decorated this way because her Mom told me they would have a Candy Party where they fill jars with different candy/sweets and the kids compile their own sweet bags by choosing from the different jars.. love the idea! So I felt inspired.. awhile ago I saw this idea where you use 3 lollipops tied together to give the impression of balloons and knew this would be the perfect occasion to use it 🙂
Estos cupcakes fueron decorados de esta manera porque su mamá me dijo que tendrían una fiesta de caramelos con frascos con diferentes caramelos / dulces y los niños elaborarían sus propias bolsas de dulces, eligiendo entre los diferentes frascos .. me encanta la idea! Así que me sentí inspirada .. Hace un tiempo vi esta idea en la que utiliza 3 chupa-chups atados para dar la impresión de globos y sabía que esta sería la ocasión perfecta para usarlo 🙂
So lets get started on the recipe.. if you like chocolate, these cupcakes are definitely for you! If it wasn´t for a 10 year old party, I might have added another element, i.e. dark chocolate ganache.. (but we´ll leave that for next time)..
Así que vamos a empezar a trabajar en la receta .. si te gusta el chocolate, estos cupcakes son definitivamente para ti! Si no fuera porque era una fiesta para niños de 10 años, podría haber añadido otro elemento, es decir, ganache de chocolate negro .. (pero lo dejaremos para la próxima vez).
RECIPE:

for the cupcakes (makes 12-15)
Ingredients:
- 1 cup of flour
- 1/3 cup of pure cocoa
- 2 eggs
- 1 cup of white sugar
- 1 & 1/4 teaspoon of baking powder
- 1/2 teaspoon bicarbonate of soda
- pinch of salt
- 1 cup of buttermilk (1 cup of milk mixed with 1 tablespoon lemon juice, left to stand for 10 minutes)
- 1 and 1/2 teaspoon of vanilla essence
- 1/2 cup of oil (vegetal or olive)
Method:
Pre-heat your oven to 175ºC and pre-line your cupcake baking tray with your liners. Sift all the dry ingredients together, while mixing the sugar and oil together. Add the eggs one by one, now add the vanilla essence and when well mixed, slowly add the dry ingredients and lastly the buttermilk. DONT OVERMIX! Bake for 20 minutes. Leave in the cupcake baking tray for 5 minutes before taking them out to cool down on a cooling rack.
for the Frosting:
Ingredients:
- 250g butter without salt
- 225g melted white chocolate (at room temperature)
- 1/2 teaspoon of vanilla essence
- 2/3 of a cup sifted icing sugar
- pinch of salt
