IΒ΄m a huge fan of chocolate chip cookies and wanted to re-create it in cake form.Β It worked because this cake tasted pretty good and the chocolate chip cookies added just the rightΒ crunch! π
However there was tad – more than a tad – disaster on the decoration front. Lets just say I wanted a more streamlined look… It all started out good until I decided to pipe some cream on the top of the cake, And from there on I was doing every thing I can to save my cake! DonΒ΄t you just hate when that happens!?Β Β Anyway the result isnΒ΄t exactly what I wanted but I think it turned out okkkkk…
The pastry cream I made to fill and cover the cake needs to be made a day in advance and left in the fridge to set. I made mine the previous night and the next day I baked my 3 layers and cooled them. Later I added cookie crumbs andΒ VOILA my chocolate chip cookie layer cake was done!
Ingredients
- 300g butter (without salt) at room temperature
- 300g brown sugar
- 6 large eggs at room temperature
- 300g sifted flour (you can also use gluten free or wholewheat flour for healthing options)
- pinch of salt
- 3 x 5ml baking powder
- 7.5ml vanilla extract
- Β½ cup chocolate chips
- 1 cup of milk
- 2 cups of brown sugar
- 180g of cornstarch
- 250g of butter without salt at room temperature (softened)
- 3 tablespoons of chocolate chips
- 5ml vanilla extract
- 1 Pack crumbed chocolate chip cookies (I use my blender for this).
Instructions
- Pre-heat your oven to 180ΒΊC / 360ΒΊF and pre-pare your moulds for baking by greasing them with melted down butter.
- Blend the butter & brown sugar until light and fluffy.
- Sift the flour, salt and baking powder and leave to the side.
- Add the eggs one by one to the butter mixture.
- Add the vanilla extract.
- Add the flour mixture on low speed, donΒ΄t overmix.
- Finally fold your choc chips into your batter. Evenly devide the batter between your 3 molds (or 2 x 24cm) and bake in your pre-heated oven at 30 minutes (check the cakes at the 25min mark).
- Heat your milk and sugar on a low heat in a sauce pan on a low heat until the sugar has dissolved, make sure you stir regularly.
- When the sugar has dissolved add your flour and use a whisk to make sure no lumps form.
- Stir for a further 3 minutes until the sauce is thickened and all the flour has been dissolved.
- Take off the heat, add the butter and when completely melted add the vanilla extract and chocolate chips.
- When your layers have cooled down, fill your layers with the pastry cream and crushed chocolate chip cookies. Spread more pastry cream on the top and sides of your cake and use the leftover crumbs on the side of your cake and decorate to your liking.
- Leave in the fridge to set before serving.

Oh boy, I’ve definitely been in “save mode” with many cakes! Frosting and I are sort of sworn enemies–I find it so tough to get the right taste AND consistency! Anyhow. This looks wonderful, like a big old cookie dough overload, and I bet it tastes heavenly.

El sabor tiene que ser buenísimo porque me encantan estas galletas pero, siendo sincera, no tiene que ser un poco pesado de masticar? Lo digo porque la textura de las galletas en pequeñitas porciones….bien pero dentro de una porción de tarta……
Si no es así, corrígeme porque me encantaría probarla!
