Mocha Ice Pops
Just imagine your favourite Iced Mocha coffee frozen solid (forever) into a popsicle!
This recipe couldn´t be easier and the trick is to add some chocolate syrup.. this takes it to another level of dreaminess…
I also added some whipped cream when the coffee part started to set.. and it worked perfectly!!
Ingredients
- (quantities depend on how many popsicles you want to make, this recipe is based on taste¡./
- Freshly brewed coffee (room temp), I used Starbucks medium roast, mixed with your favourite milk
- Chocolate Syrup
- Vanilla Essence
- Whipping Cream
- Granulated white sugar
- Cocoa powder for sprinkling
Instructions
- Mix the coffee, chocolate syrup (as much as you like.. according to taste) and vanilla paste/essence. Pour into plastic take away cups and put into the freezer. After 15 minutes put in the sticks (when the mixture isn´t completely set yet but can hold the sticks in place). Whip the cream with the sugar until it forms soft peaks, put into a piping bag and fill the rest of the plastic cup with the whipped cream. Sprinkle over some cocoa powder. Put into the freezer to set completely.
For popsicle sticks, this time I used some wooden cutlery & used an edible gold pen to write on them.. I think it came out quite nice and would definitely use them again 🙂 I also used white plastic take away cups for the molds instead of the popiscle molds I´ve been using lately..
So now you know how to enjoy your favourite coffee on a warm summer day! Until next time guys, hope your Monday has been/will be awesome!
