Cherry Almond Fudge
This fudge is made in the microwave with just a few ingredients i.e. white chocolate, sweetened condensed milk, almond extract and glazed cherries..
All you need is a microwave (check), a microwavable bowl (check), square pan/mold (check), rubber spatula (check), fork/spoon to mix (check), wax paper (check), chopped white chocolate (check), almond extract and/or chopped almonds (check, check) and glazed cherries (yes check!). That´s it! The best part.. it´s super quick!
Ingredients
- 335g sweetened condensed milk
- 450g chopped white chocolate
- 10 glazed cherries (halved)
- few drops almond extract
- Opsional:
- add chopped almonds
Instructions
- Melt your white chocolate in a suitable container in the microwave at 30 second intervals until all the chocolate has melted completely (about 1.5 - 2 minutes).
- Mix in your almond extract.
- You can also add your chopped cherries (quartered) and chopped almonds at this stage if you want them to be all throughout the fudge (I added my halved cherries on the top after I added my fudge mixture to my pan).
- Add your sweetened condensed milk - at this stage it will look like the mixture has seized and you might think it is a failure but don´t worry it is perfectly fine.
- Line your square pan/mold (20cm x 20cm / 8 in x 8 in) with wax paper and make sure you leave enough at the ends to help you remove the fudge once it has set.
- Pour your fudge mixture into your pan/mold and level it with a rubber spatula.
- This is now when I added my halved cherries (assuring that each square had a cherry in the middle)
I have a ton of ideas for this fudge recipes and I´m pretty sure I´ll be posting another version/variation sometime soon 😉 Don´t you just love when you make something easy and the result is great, well that is how these are.. easy.. and suuuuuuuuper delicious!
Since Valentines Day is just around the corner, I decorated this mason jar with a pink doily, red polka dot heart made with wrapping paper and some red and white baker´s twine. I saw the idea on Pinterest and absolutely loved it! Now imagine it full of this delicious (and did I mention easy) fudge and you good to go.. you can handout jars filled to the brim to all your loved ones!
