These Mini Sweet Potato Pecan Pie Puddings are simply delicious, and perfect for this time of year when everyone is baking something with sweet potatoes! They are made of a sweet potato pudding mixture, topped with a brown sugar and pecan topping that becomes a lava of ooey gooye caramely goodness! Trust me these are good! Oh and did I mention they are baked in a muffin tin?
Mini Sweet Potato Pecan Pie Pudding
These mini puddings are the perfect Fall dessert because..
- They´re easy to make,
- They taste amazing and
- They´re ready to serve in minutes!
This week has been super crazy! I´ve just been so busy! And we arrived home yesterday after a whirlwind (4 day) trip to Italy. Just me and hubby and it was simply perfect! I still can´t believe I went to Italy guys.. pinch me!

Ingredients
- 1 cup + 3 tablespoons all purpose flour
- 2 teaspoons baking powder
- pinch of salt
- 0.75 cup brown sugar
- 2 teaspoons pumpkin spice see how to make your own here
- 0.75 cup sweet potato puree
- 0.25 cup milk (I used fat free/skimmed)
- 0.25 cup melted butter or vegetable oil
- 2 teaspoons vanilla extract
- Pecan Brown Sugar Topping
- 1 cup brown sugar
- 0.5 cup chopped pecans
- 1.5 cups very hot water
Instructions
- Preheat your oven to 350ºF/175ºC.
- In a medium sized bowl, stir together flour, baking powder, salt, brown sugar and pumpkin spice. Set to the side.
- In a smaller bowl, stir sweet potato, milk, melted butter and vanilla together to combine.
- Pour wet ingredients into dry ingredients and mix to create a thick batter.
- Pour into a large muffin tin with 6 holes or a medium sized muffin tin with 12 holes. Fill halfway up the holes.
- In a separate bowl, stir sugar, brown sugar and pecans together. Spread over the top of the batter evenly.
- Pour hot water over the entire thing, without stirring, and bake for 25 - 30 minutes or once the middles are set. Tip: place on a baking sheet incase it bubbles over.
- Cool 5 - 10 minutes before serving.
- Serve hot with freshly whipped cream!

Do you have any tips for removing the desserts from the muffin tin? I can never seem to get the desserts to remove cleanly, but yours came out so pretty!
