Who doesn´t like Creme Brulee? If it´s you I don´´t want to hear it. Keep it to yourself! OK? However this Creme Brulee is different for two main reasons: 1 – it was made in the MICROWAVE. Yesssss! And 2 – it was made with Baileys Irish Cream!
I promised you guys last week when I posted my Baked Baileys Cheesecake topped with rich delicious Baileys chocolate ganache, that I´ll be sharing one more Baileys recipe, and this is it.

Creme Brulee stole my heart at a very young age. You see when I grew up there was no McDonald´s. Nope. And we didn´t go eat out often either because it was just too expensive, but when we did, it was such a great treat! AND on one such time, I can clearly remember ordering Creme Brulee for the first time and falling in love with it!
The best part was the crackly caramel topping which I thought had to be super dificult to make since it tasted so good… But to my surprise it was super easy, and needed no special skill to make it!! So that´s why I decided to make a super short video tutorial to share with you guys HOW EASY IT IS TO MAKE the delicious sugar topping on Creme Brulee!! Yeahhh!!
Ingredients
- 1 cup cream
- 2 L egg yolks
- 4 tablespoons sugar
- 2/3 tsp vanilla extract
- 2 tablespoons Baileys
- More sugar for the Caramel Topping
Instructions
- Heat cream in the microwave for 2 minutes
- At the same time whisk together the egg, sugar & vanilla extract
- When well blended, add the Baileys and continue to mix until blended
- Continue to whisk while adding the hot cream down the side of the bowl
- When all mix place in microwave dish filled with hot water and cook for about 3 minutes , just until the custard has set
- Remove from microwave and leave to cool completely in the water
- Allow to set for a further 1 hour in the fridge before doing the sugar topping.

Notes
!Tips Don't fill the ramekins until the top, it will overflow. Mine worked perfectly (3rd time) if I filled them halfway.

So on a more personal note, I have some exciting news. I leave for a week trip to Portugal in just a few days and I simply can´t wait. You guys can be sure that´ll I share a post or two of what I saw and experienced there (the desserts too ofcourse)!

I’m so glad I found this recipe! Creme brûlée is one of my favorites to eat and make but is a commitment. I love this microwave version and adding baileys to any dessert is a win!

Johlene, you are KILLING it with all these Irish Cream recipes! So glad I always have at least 2 bottles of the stuff on hand, because at this rate I’m going to roll through them quickly! I LOVE creme brulee but would have never thought to make it in the microwave! How genius is that! And easy peasy! Can’t wait to try this, my dear!
