Microwave Banana Pudding topped with Brown Sugar Italian Meringue. Need I say more!?
This banana pudding takes only 5 minutes in the microwave. It´s super tasty just like it is BUT what if you did something really spectacular like top it with Italian Meringie made with BROWN SUGAR!
I mean just look at that meringue! I could eat spoonfuls of this!
This meringue is super versatile too and can be added to almost any dessert, or even on top of a cupcake as frosting. Imagine this: banana cupcake, filled with dulce de leche and topped with this meringue.. HOW AWESOME WOULD THAT BE!?
Ingredients
- 2/3 cup white sugar
- 3 egg yolks
- 3 tablespoons flour
- 2 cups milk
- pinch of salt
- 1½ teaspoons vanilla extract
- 2 tablespoons butter
- 2 medium bananas
- 150g egg whites (5 large)
- pinch of salt
- few drops of lemon juice
- 45g granulated sugar
- 15g powdered egg white
- 150ml water
- 300g brown sugar
Instructions
- Add sugar, egg yolks, flour, milk and salt to a blender or food processor bowl.
- Pulse 5 times until mixed well.
- Pour into 2-quart batter bowl. If desired, pour through a strainer into batter bowl.
- Microwave on HIGH 4-5 minutes. Stop and whisk well. MW for 2-3 more minutes stopping and whisking when pudding starts to rise up in bowl or at least once a minute.
- When mixture thickens enough to coat a spoon (see picture), remove from microwave and whisk till smooth.
- Allow pudding to cool a bit before adding butter and vanilla. Whisk well. Place a sheet of plastic wrap on top of cream and allow to cool to room temperature.
- Put whites, salt and lemon juice in a mixer bowl.
- Whip whites slowly until frothy, then fast until stiff peaks.
- Gradually add brown sugar and egg white powder (mixed together).
- Allow each spoonful to dissolve before adding the next.
- Whip to stiff, glossy peaks.
- Heat sugar and water to 115°C
- Remove from the heat and allow the bubbles to subside.
- With the beaters running, pour the sugar syrup into the whipped whites in a thin stream, then continue whisking until bowl is cool to the touch and the meringue is stiff. This will take between 10 and 15 minutes.
- Dish the banana pudding in single serving dishes and top with the brown sugar Italian meringue.
- Use a blow torch to brown the meringues at the top.
- Serve immediately!

I love easy recipes like these. They are so quick to throw together, and when they taste as good as this one, the make me a very happy girl! Also, you could make this without the brown sugar Italian meringue and simply top it with whipped cream… 😉
