It´s very cold today here in San Mateo and I have a few recipes lined up with photos (already edited) . I thought it would be a nice idea to do an extra post this week 🙂 Hot chocolate cupcakes with peppermint candy cane flavoured frosting! Not only are they made with real hot chocolate, I dipped them into melted chocolate before topping them with peppermint flavoured frosting sprinkled with crushed candy cane.. absolute bliss I tell you!

No sólo están hechos con chocolate caliente de verdad, yo los metí en el chocolate derretido antes del frosting con sabor a menta .. les digo felicidad absoluta!
There´s 5 days left until Xmas and never has Xmas come só fast for me.. I can remember when it was 1 month ago and now it´s basically here (what happened in the last month.. it seems that time literally flew.. literally.. with wings and all..)..
Faltan 5 días hasta Navidad y nunca ha llegado tan rápido La Navidad para mí .. Puedo recordar cuando faltaba aun 1 mes y ahora está, básicamente, aquí (lo que ocurrió en el último mes .. parece que el tiempo voló literalmente .. literalmente .. con alas y todo ..).
This recipe was inspired by some recipes I saw on the Net but also by the box of Candy Canes some very sweet American friends bought us.. I´m a huge fan of candy cane, the taste, the look.. they inspire me to make/bake things 😉
Esta receta está inspirada en diferentes recetas que he visto en la red y también la caja de bastones de caramelo que unos amigos americanos muy dulces nos compraron .. Soy una gran fan de estos bastoncitos de azúcar, el sabor, la apariencia .. me inspiran hacer las cosas / hornear;-)

Ingredients:
(makes 12-15 cupcakes)
For the batter:
- 1 cup of flour
- 1/3 cup of hot chocolate powder prepared with 1 cup of full cream or low fat warm milk
- 2 eggs
- 1/2 cup of white sugar (you can add more if your hot chocolate isn´t very sweet)
- 1 teaspoon of baking powder
- 1/2 teaspoon bicarbonate of soda
- pinch of salt
- 1 teaspoon of vanilla essence
- 125g of butter without salt
For the dark chocolate glaze:
- 150g of dark chocolate cut into pieces
- 50g of butter
- 4 Chopped candy canes
- 1/2 teaspoon of peppermint extract (opsional)
- 250g of butter without salt at room temp
- 300g of icing sugar well sifted
- green gel colorant
Method:
For the batter:
Pre-heat your oven to 175ºC and pre-line your cupcake baking tray with your liners. Sift all the dry ingredients together, while creaming the sugar and butter together. Add the eggs one by one, then add the vanilla essence and when mixed, slowly add the dry ingredients and lastly the hot chocolate mix (make sure it has cooled down to room temperature). DONT OVERMIX! Bake for 20 minutes or until a skewer comes out clean. Leave in the cupcake baking tray for 5 minutes before taking them out to cool down.
For the dark chocolate glaze:
Melt the chocolate & butter in the microwave until all is melted.. immediately dip the cooled cupcakes into them and let them set on a cooling rack.
For the frosting:
Cream the butter until light and fluffy, then add the sifted icing sugar, now add the peppermint extract (I mentioned in the ingredient list that it is optional, reason being that the crushed candy cane has sufficient peppermint flavour but if you like the flavour of the peppermint, go ahead and add some extract) and gel colorant (I used very little to get the minty colour I have). Now frost your cupcakes with an open round nozzle and top with crushed candy cane 🙂
So in just a few days I´ll post a recipe of a layer cake I made for a Xmas party we attended last night. I loved the flavours and the recipe is 100% original (thought out and made by MOI.. ME.. MI..).
