Chocolate Chip Cookies made with almond flour and zero sugar that taste so good that you´d want to make a fresh batch as quick as you can! I´m not kidding…
HOMEMADE GLUTEN FREE CHOCOLATE CHIP COOKIES
Where I live in the Canary Islands, Spain we don´t have too many options. Gluten Free was a curse word just a year ago. Things develop much slower this side of the hemisphere.
When I decided to make these cookies (read below how it all came about..) I knew that I could find almond flour as I have used it numerous times before to make macarons, but this time I wanted to make my own almond flour with real almonds. AND it worked guys! I´m so chuffed!
I´ll never buy almond flour again!
My inspiration for the recipe came from the BeachBody’s FIXATE cookbook. All of these recipes are approved for the 21 Day FIX, and WOW do they all look and sound delicious!

Ingredients
- 3 cups almond flour (I made my own by blending whole amonds in a blender until fine)
- 1 tsp baking soda
- 0.25 tsp salt
- 0.25 cup melted coconut oil
- eggs (1 L egg + 2 L egg whites)
- 1 tsp vanilla extract
- 0.25 cup honey (you can use maple syrup as well)
- 0.50 cup dark chocolate chips
Instructions
- Pre-heat the oven at 375ºC.
- Line two baking trays with parchment paper and set aside.
- Combine the almond flour, baking soda and salt in a bowl and set aside.
- Beat coconut oil and honey in a large bowl with a whisk for about 3 - 4 minutes (until creamy).
- Add egg, egg whites and vanilla extract and whisk for a further 2 minutes.
- Add the almond flour mixture to the egg mixture until blended.
- Add chocolate chips just until blended.
- Drop tablespoons full on the prepared baking sheets. Flatten cookies with a spatula if traditional cookie appearance is desired.
- Bake for 14 - 16 minutes or until golden brown.
- Store in an airtight container.
Notes
#1 I made a third of the recipe and it worked out fine and yielded 8 cookies.
