Gluten Free Peanut Butter Chocolate Chip Mug Cake! Yum!!
FIRSTOFF how has the start of your New Year been?? To be honest I haven´t been able to work much yet, because the kids only went back to school today. In Spain people generally exchange presents on Three Kings Day which is January the 6th. You can watch the Three Kings Parade video I shared on Facebook here. It´s a biggggg deal here in Spain, and although some families share presents during Christmas as well, the REAL exchange happens on the 6th.
AND The Spanish are not stingy during this time either… I´ve never EVER got so many presents for “Christmas” until I married my Spanish (Canarian) husband. The kids (especially) get spoilt rotten 🙂 To name a few of the gifts I got: (just like a mini haul) winter pyjamas, a great smokey eye make-up palette, 2 gorgeous lipsticks, luxury vanilla scented bubble bath, a stunning coat, clothes, boots, chocolates… Oh and we got a new PUPPY too! The best present ever!! Meet CHASE. Named after one of the ever so famous PAW PATROL PUPS that my son Luca loves to watch 🙂
Today I want to share with you guys this super delicious but oh so easy mug cake recipe. The best part it´s super healthy too!! 🙂
Ingredients
- 4 tablespoons gluten free oats flour (make your own by blending gluten free oats in your blender)
- 1/4 teaspoon baking powder
- 1 tablespoon brown sugar
- 4 tablespoons fat-free milk
- 3 tablespoons peanut butter (smooth)
- 2 tablespoons dark chocolate chips
- 1 teaspoon melted coconut oil
Instructions
- Combine all the ingredients in a bowl. Mix with a rubber spatula until the batter is smooth. Smooth out the surface with a small rubber spatula or the back of a spoon before cooking. This won't affect the taste but the end result will be prettier.
- Cook in the microwave for 1 minute and 30 seconds. If the cake is not done, nicrowave an additional 15 seconds.
- Allow the cake to cool for a few minutes before eating. Best eaten while still warm or within a few hours of it being cooked.
