Easy Homemade Pumpkin Pie
Made with sweetened condensed milk and a super easy and fast homemade crust!
Pumpkin Pie is on everyones lips this time of year, especially if you were brought up with it..
I wasn´t but wish I was..
This Pumpkin Pie is right up my alley.. it consist of sweetened condensed milk.. not ideal milk like most of them but condensed milk.. I so knew I would like it when I read the recipe 🙂 and I was right!!
Ingredients
- 2 cups all-purpose flour, plus more for flouring
- 2 pinches of salt
- 210g cold unsalted butter, cut into 1/2-inch pieces
- 1 - 2 tablespoons of ice cold water
- 4 cups of pumpkin puree (click here to see how I make mine 🙂
- One 14-ounce can / 1 3/4 cup sweetened condensed milk
- 1/2 cup fullcream
- 2 tablespoons cornstarch
- 2 tablespoons honey (or molasses / dark corn syrup / golden syrup)
- 2 tablespoons vegetable oil
- 1 tablespoon pumpkin spice
- pinch of salt
- dash of vanilla essence
- 3 large eggs
Instructions
- In a large bowl, combine the flour and salt. Add in the butter and work into the dough with your stand mixture fitted with your paddle attachment (you can use your fingers or a fork for this too) until the mixture is crumbly. Stir in just enough ice cold water (1 to 2 tablespoons) with your dough hook fitted just until the flour is moistened.
- Roll out the dough on floured surface (you need a 3cm overhang on your pie tin, all around). Transfer to the pie dish. Press the dough gently into your dish to make sure all the surface and edges are covered. Cut the excess of but ensure to leave 1/2 cm of overhang. Fold the overhangs under and crimp decoratively (see my video on how to do that). Pierce the dough all over with a fork. Chill in the refrigerator for 15 minutes.
- Line the crust with foil, fill with dried beans or pie weights and blind bake until the sides are set, (this takes about 12 minutes). Remove the foil and beans. Reduce the oven temperature to 350ºF / 175ºC.
- Add the pumpkin puree condensed milk, cream, cornstarch, vanilla, honey, oil, pumpkin spice, salt and eggs and combine thoroughly.
- Pour the filling into the crust and bake until the filling is set in the center (this takes about 1 hour). Transfer the pie to a rack and cool for 30 minutes. Serve at room temperature or chilled.
I love the simplicity of this pie crust.. you don´t need many ingredients and all you need to do is make sure your ingredients are ice cold and you guaranteed success!

I grew up with Pumpkin Pie, and it’s absolutely one of my favorites (that and Marionberry Pie), but Pumpkin holds a special place in my heart with it’s rich creaminess. How are you enjoying the videos Johlene? They seem like they’d be a lot of work! xoxo
