In honour of this Giveaway, I decided to make you guys this super delicious Baked Baileys Cheesecake. In my last recipe post, I shared my 5-minute Baileys White Hot Chocolate recipe with you guys. Todays recipe takes a little longer than 5 minutes to make but it´s so worth it: Baked Cheesecake made with Baileys Irish Cream. Fill it up sister!
Like I said in my previous post, I really love Baileys. The new chocolate flavoured one is so good (in this recipe I used the original version)!! Awesome Tip: If you can´t find the chocolate version in a store near you, just add some pure dutch cocoa powder, mix it really well, and you´re good to go 🙂
Now back to this cheesecake. If I tell you that I think something is good, you´ve got to trust me. This Baileys Baked Cheesecake is g-o-o-d!! No it´s amazing! “D”elicious!
MY SUPER DUPER FOOD HACK TIP for when a recipe calls for eggs at room temperature, and you forgot to take them out of the fridge…
Put them in a bowl of hot water for a few seconds. That´s it! Works everytime.
Ingredients
- 100g Chocolate cookies
- 50g Melted Butter
- 300g cream cheese at room temperature
- 1 L egg at room temperature
- 45 ml Baileys Irish Cream
- 1/2 cup packed brown sugar
- 1 tsp vanilla extract
- pinch of salt
- 1 tbsp flour
- Option 1: Melted Dark Chocolate
- Option 2: Baileys Chocolate Ganache
Instructions
- Blend your chocolate cookies in a blender until the crumbs are fine.
- Add the melted butter and blend again.
- Spoon the mixture into a prepared (non stick spray or melted butter) sprinform pan.
- Press down evenly until the crust is even / level all around and bake at a preheated oven at 175ºC / 350ºF for 8 - 10 minutes.
- When done, leave to one side.
- Soften the cream cheese for 2 minutes in your Kitchen Aid stand mixer (or a hand beater).
- Add all the other ingredients and blend until creamy.
- Pour the mixture until almost the top of the sprinform pans with the already baked chocolate cookie crust.
- Cover the pan/s with foil to make sure the water (see below) doesn´t penetrate.
- Pour water in a baking tray and place the sprinform pan/s in it. The water should go about half way up the side of the pan.
- Bake for 40 minutes (2 x 4 in / 10 cm pans) or 50 min (1 x 6 in / 15 cm pan) until just set and slightly jiggly in the middle.
- Switch off the oven, open the door slighly and leave in the oven for a further 40 minutes to 1 hour.
- Remove from the oven and allow to cool completely at room temperature.
- Set in the fridge for at least 3 hours (I left mine overnight).
- Top with melted chocolate (serve immedately) or option 2, chocolate ganache (top with this before setting in the fridge).

Sprinform Pan Sizes 1 x 15 cm (6 in) or 2 x 10 cm (4 in)

You have totally just created the best dessert ever! I love cheesecake, and Bailey’s is one of my go-to dessert drinks. With this combo, I only need to reach for a plate. Love it! Oh, and that chocolate ganache on top? I could eat that with a spoon…it looks perfect!
