Passion Fruit Cake
Passion fruit cake made with cream cheese frosting and passion fruit pulp. This cake is a perfect recipe for the warmer months!
Today I bring you a Passion Fruit & Cream Cheese filled layer cake.. passion fruits are tropical fruits and lovely to use for fillings, icings, toppings in any kind of cake.. I decided to combine mine with a cream cheese filling..
Ingredients
- 1½ cups of flour
- 1½ tspns of baking powder
- ¾ cup of sugar
- ½ cup of oil (I used sunflower)
- ½ cup of cold milk
- 2 large eggs
- 5 ml vanilla extract
- Pinch of salt
- Pulp of 5 passion fruits (granadillas), about 100gr, or a small tin of pulp.
- 1 (8 ounce) package cream cheese 1 cup white sugar
- (225 grams)
- 1/8 teaspoon salt
- 1 teaspoon vailla extract
- 1 1/2 cups heavy wipping cream
- 1 cup of Passion Fruit (Granadilla) Pulp
Instructions
- Preheat the oven to 180ºC / 360ºC and prepare one bunt or ring cake pan with nonstick spray.
- Add all the ingredients for the cake to an electric mixer, beat for 3 – 4 minutes, starting on medium speed and progressing to high speed.
- Scrape and mix all the ingredients in the mixing bowl with a spatula, and transfer the batter to the prepared cake pan.
- Bake for 20 to 25 minutes, if your tester comes out clean, your cake is done.
- Transfer cake to a cooling wire to cool.
- In a small bowl beat whipping cream until still peaks form; set aside. In a large bowl combine cream cheese, sugar, salt and vanilla.
- Beat until smooth, then fold in whipped cream.
- Add the Passion Fruit and mix.
- Use immediately or refrigerate airtight up to 3 days; stir before using.

Passion fruit is my favorite flavor! This cake is reminding me that I need to bake with it again soon–looks delicious!
