As the kids were off last week for Easter holidays, I decided to make some Raspberry Muffins for breakfast because I love spoiling my family during the holiday times with a special breakfast 🙂

Needless to say these were hardly out of the oven and we devoured them.. what´s better than a hot steamy muffin.. 😉
Huelga decir que apenas salieron del horno, se los comieron .. qué hay mejor que un muffin recién hecho y calentito .. 😉

RASPBERRY MUFFINS
Ingredients:
Method:
Pre-line your tray with liners/or grease your pan with melted butter. Then pre-heat your oven to 175ºC. Sift your dry ingredients and leave to the side. Mix your sugar and oil, add the vanilla essence and then add your eggs 1 x 1. Lastly add your dry ingredients just until mixed (don´t overmix) and lastly your frozen raspberries. Fill your liners 2/3rd of the way. Bake for 30-35 minutes until golden brown and a tootpick comes out clean. Leave to cool on a wire rack and devour as soon as your mouth can stand the heat.. 😉
