Healthy Gourmet Salad Recipe
Those of you that have been following me for a while, will know that I recently added “savoury” and “healthy” recipes to my blog topics. The reason why I´ve done this is to show you guys that although I love desserts, because I definitely do, I also love savoury and healthy dishes too. However I´m one of those people that could easily have dessert before my main meal.. Don´t judge!
However, this blog represents me, and to get me, you need to see all of me. All of me loves food, any kind of food *smile*
In a local chain supermarket in Spain, where I live, (most of you that follow me, know that) called Mercadona, we recently found a goats cheese roll stuffed with pineapples and dipped into chopped toasted hazelnuts. Hubby and I were in Tenerife at the time and thought why not try it. We were so glad we did! It tasted so good.. Really so good!
We paired it with Spanish “Jamon Serano” on a delicious seed loaf and loved it. So that´s how the idea for this salad was born…
Quantities depend on taste. Read this article about the difference between parma and cured ham
Ingredients
- jamom serrano (cured Spanish ham). I´m sure it will taste good with parma ham too.
- pineapple (tinned or fresh)
- toasted chopped hazelnuts (you can toast the hazelnuts in a pan on the stovetop or in the oven, and then blend them in your blender if you can´t find them in your local supermarket)
- goats cheese
- spinach leaves
- olive oil
- fresh lemon juice
- balsamic vinegar
- honey
- salt
- black pepper
- chopped parsley
Instructions
- Add your cleaned spinach leaves to your bowl.
- Top with all your ingredients, add the chopped hazelnuts last.
- Add all your ingredients to a jar and shake well. Your dressing is now ready to be used.
- Drizzle your homemade salad dressing over your gourmet salad and enjoy!
Currently I´m in South Africa on a very unexpected trip. My mother fell very ill with COPD, which basically means she can´t breathe and her lungs are not expelling carbon dioxide like they should. Last week she was delcared critical by her doctor and they recommended that I come here. Me and the kids left our home last week Thurday, slept over in Madrid to pick up a emergency travel certificate for my daughter and arrived in South Africa on Saturday morning.
Since then her condition has been up and down, good moments and very bad ones. Although she remains in ICU she is much much better. So if you guys see that I´m very quiet on social media, or even here on the blog, that is the main reason. I also don´t have a good internet connection and need to go to a coffee shop to use their wifi and I just don´t have much time to do that..
Forgive me if I´m not commenting much on your blogs either. I promise to make up when I get back mid September..

Oh Johlene, you’re making my mouth water over here girl lol. The only thing I would replace is the prosciutto because I’ve never been a big fan of it. Too salty for me. But I think bacon would be a suitable replacement right? Love this.
