Easy Salted Caramel Pumpkin Cheesecake Parfait
If you are tired of slaving over the stove around Thanksgiving, or any other special occasion this time of year, then this is the dessert for you! Salted caramel pumpkin cheesecake parfaits are the cheater’s version, okay maybe time-saver’s version sounds better, of the famous pumpkin pie!
This is the way to go if you’re looking for the easy way out, but do not want to sacrifice an ounce of the tastiness that pumpkin pie offers. This recipe is a winner, and may just take the place of your traditional pumpkin pie from now on… I mean who doesn´t like anything that´s EASY to make but still tastes delicious??
Bring it on!
The main ingredient, is, of course, PUMPKIN. You get to choose between tinned or homemade. Besides just being plain fun to bake with this time of the year, these members of the squash family, along with most other orange produce, pack in a huge punch of vitamin A – great for your eyes and skin! In fact, just one cup of pumpkin will give you almost 200% of your daily vitamin A requirement! Wow!
Thanks to the rich cream cheese used to make it, it´s the perfect indulgence that you can’t help but savour every last bite of..
For a base, I also used some leftover pumpkin spice bundt cake, cut into small squares. If you haven’t baked yours’ yet, it’s time to get on top of it! This bundt cake is super delicious!
To top off all the deliciousness that these delicious parfaits are already full of, inside and on top, it contains homemade salted caramel sauce. Tell me you’re not motivated to jump up, run into your kitchen, and get started!
Ingredients
- Cube your pumpkin spice bundt cake
- 0.5 tub 4 ounce (112g) full cream cheese
- 0.5 cup cooked pumpkin puree. Tinned or make your own
- 0.5 cup sifted icing sugar
- 2 teaspoons vanilla extract
- Homemade and easy salted caramel sauce
- Store bought or freshly whipped cream
Instructions
- Add your pumpkin spice bundt cake cubes to the bottom of your glass/jars.
- Top with the pumpkin cream cheese mixture.
- Add 1 - 2 tablespoon/s of the salted caramel sauce.
- Lastly add the whipped cream and drizzle more salted caramel sauce on top! Serve!
Notes
Note #1:Yield depends on the glass/jars you use.
Note #2: General rule is a third of pumpkin spice bundt cake, a third pumpkin cream cheese and a third freshly whipping cream, and 1 - 2 tablespoon/s salted caramel sauce.

I hope you do! You can change them up however you want.. for example you can easily replace the pumpkin spice bundt cake for crushed Graham Crackers and add the pumpkin spice into the pumpkin pie mix 🙂
