So what have you guys been up to so far these Holidays?? I´ve missed you all!
I´ve been quiet, I know, but it´s because I need to take some very needed time off to reflect on the past year, prepare myself for 2016 and spend time with my precious family… 2015 has been a super busy year for me, trutfully, I´m very tired and need some time off just to be me (make sense?)
Luckily I had these cupcakes prepared, ready to share with you guys just before New Years Eve, because I think they could be a great addition to any party table and it´s my way to wish you all HAPPY NEW YEAR 🙂 🙂
I can´t believe 2015 is nearly OVER! What happened?? One moment I was checking my January calender for 2015 and the next I was planning our yearly Christmas party with our friends.. Craziness!!
So who is dressing up for New Year´s and going out? Me no.. we will have dinner with hubby´s family (I will dress up for it somewhat..) and eat twelve grapes, one by one, keeping time with the clock as it strikes midnight, as is customary here in Spain for New Years 🙂
Ingredients
- 3/4 cup all-purpose flour
- 3/4 cup white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- pinch of salt
- 6 tablespoons unsweetened cocoa powder
- 3 tablespoons melted, unsalted butter
- 6 tablespoons buttermilk (make your own|)
- 1 large egg
- 1 large egg white
- 250g / 8 oz unsalted butter at room temperature
- 2 heaped tablespoons cream cheese
- 450g / 1 pound / 16 oz sifted icing/powdered sugar
- 1/2 teaspoon vanilla extract
- pinch of salt
- 1/4 cup gluehwein - get my gluehwein recipe here
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350ºF / 175ºC.
- Line standard 12-cup muffin tinwith paper liners.
- In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. Set aside.
- With an electric mixer, combine pure cocoa powder and 3 tablespoons hot water until a thick paste forms (this process intensifies the chocolate flavor).
- Add melted butter, buttermilk, egg, and egg white; beat until combined.
- Whisk in flour mixture until smooth.
- Scoop batter into prepared liners.
- Bake until a toothpick inserted in the center of a cupcake comes out clean, about 20 - 22 minutes.
- Transfer cupcakes to a wire rack and allow to cool completely befpre frosting.
- Cream the butter until light, fluffy and creamy
- Add the icing sugar slowly, and then the rest of the ingredients. Blend well.
- Fill a piping bag with your favourite nozzle to top cupcakes with the gluehwein frosting.
- ENJOY!
