Caramelised Onion Tartlets with Bacon & Goats Cheese

The last time I made a YouTube video was around this time last year. Then I got burnt-out and decided that YouTube was just too much to handle alongside a blog, life, kids, etc etc etc. Well.. I´ve decided to give it another try. Here´s to me (ching ching) making it work and not feeling overwhelmed by trying to be perfect.. Anyone else suffer from perfectionism..? 😉
Ingredients
- 1 roll puff pastry or make your own
- 3 red onions
- 3 packs bacon
- 3 large cloves garlic
- goats cheese
- 3 tablespoons balsamic vinegar
- 6 teaspoons brown sugar
- fresh thyme or 1 tsp dried
- salt & pepper to taste
- 1 tablespoon olive oil
Instructions
- Cut the puff pastry into 9 rectangles with a pizza cutter.
- Divide them and score a rim in each rectangle, be careful not to cut through.
- Brush the rims with egg wash (egg & milk) and poke with a fork several times to allow air to escape.
- Bake for 10 min at 180ºC/360ºF.
- In the meantime fry the chopped red onion, garlic and bacon in a pan with the olive oil.
- When the bacon is crispy, add the balsamic vinegar, brown sugar, thyme, salt and pepper.
- Cook until brown..
- Press the centre part of each rectangle down and fill with the bacon red onion mixture.
- Top with goats cheese, more thyme (fresh if possible) and bake in the oven, at the same temperature, for a further 15 - 20 minutes until golden brown.
- Serve immediately!
- WARNING: These are sooooo good! 🙂

i’m about to make these for dinner tonight with some red wine on the side. i’ll be using white onions because that’s what i have so forgive me 🙂 but can i say how refreshing it is to find a recipe on a blog that has a few personal words, a couple of well chosen pics and then the recipe? also, minimal ads to distract. just want to say thanks for that

Johlene! My sister-in-law brought these to our Thanksgiving as an appetizer and they were so amazing! So I watched your video and it really is lovely, I absolutely love the music- it made it that much more fun to watch. Little editing tip, for some reason the written instructions up on the screen blipped out far too early and so I was not able to read all the instructions. Other than that super sweet video and thanks so much for stepping up sharing. I will of course use the written recipe when I make them myself. Thanks again!
