Banana Walnut Bread Muffin Recipe..
Topped with a salted caramel and cream cheese frosting mixture!
Awhile ago I posted my banana loaf recipe topped with honey & walnuts. Today´s recipe is that exact same banana loaf but this time I added the walnuts in the batter and baked it in a muffin tin- Hence the title: Banana Walnut Bread Muffin Recipe! Did I mentioned that they are topped with a salted caramel and cream cheese mixture?
I thought it would be a cute idea to bake them in muffin tins instead of the normal loaf pans. This way each person has their own portion of these delicious looking (and smelling.. and tasting) banana and walnut bread muffins! (smile)
Banana and Walnut Bread baked in a muffin tin and topped with a delcious mixture of salted caramel and cream cheese
Ingredients
- (makes 6 - 8 large / 12 normal sized muffins)
- 1 ¾ cup All Purpose Flour
- 1 cup Granulated Sugar
- 1 Stick of Unsalted Butter at room temperature
- 4 Large / 6 Medium ripe Bananas, lightly mashed
- 1 tsp Ground Cinnamon
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Salt
- 2 Eggs
- 2 Tbsp Whole Milk
- 1 tsp Vanilla Extract
- 1 cup chopped walnuts
- 150g cream cheese at room temperature
- 4 - 5 heaped tablespoons salted caramel sauce click here but add 1/2 teaspoon of salt to the sauce at the end
- dash of vanilla essence
- pinch of salt
- more chopped walnuts
- salted caramel sauce to drizzle
Instructions
- Preheat your oven to 175ºC / 350ºF.Grease a muffin tin with melted butter. In the bowl of an electric mixer fitted with a paddle attachment, cream together the butter and sugar. Add the eggs and whisk to combine. Add the mashed bananas and vanilla and mix to combine. Add the flour, cinnamon, baking powder, baking soda and salt and mix together until just combined. DO NOT OVERMIX!! Add milk while mixing in the dry ingredients. Lastly with a spatula add the chopped walnuts. Use your ice cream scooper to scoop the batter into the prepared muffin tin and bake for 25 minutes or until a scewer comes out clean. Leave in the muffin tin for 5 minutes and with the help of a knife or spatula remove the muffins and let cool completely on a wire rack before adding the topping.
- Use a balloon whisk to mix all your ingredients of your topping together and spread on your muffins when cooled.. Lastly add more chooped walnuts and a drizzle of the salted caramel sauce! Oh YUM!
To make this Banana Walnut Bread Muffin Recipe you only need a handful of ingredients and the best part is you can use those overipe bananas you were going to throw away anyway! (smile again)

That´s not too long ago and it has become one of the most famous baked goods in the world!
This recipe is super easy and I hope you guys try it out at home.. it could be a great brunch for the upcoming Christmas holidays or simply part of your dessert spread on Christmas day. (smile) You could also use this recipe for a banana bread cake or use it in a banana bread pudding recipe (now there´s a thought or two!).

I love banana bread turned into muffins, because it has a better ratio of crunchy outside bits to soft filling! The top of the bread is always my favorite part, so more top = more better. 🙂
