Banana Mini Bundt Cakes
It´s Monday and I must be honest I´ve been taking my time with this post.. I´m super tired and although I´ve done alot today, I wonder how much of that was actually productive?
After I made the Honey Rum Cupcakes, I had left-over frosting and decided to freeze it. This was the 1st time I used leftover frosting after freezing it and I must say it worked better than I thought it would. I defrosted it in my microwave at 20% power for 1 minute and then beated it on high in my stand mixer.. I realised the taste of the honey rum was stronger (somehow the freezing process made the alcohol more potent) so I added more icing sugar and it worked out perfectly 🙂
How did I make them?
To make these banana mini bundt cakes I used the same recipe I used to make my banana loaf cake recipe but added a third cup of buttermilk right at the end because I wanted the consistency of my cake to be more “sponge” like than bread like. Hope that makes sense!
